Today is National Creamsicle Day which celebrates an enjoyable frozen treat that gives is the perfect way to sit back, relax and cool down on a hot August Day. The combination of vanilla cream and fruity ice is pure genius.
The classic Creamsicle flavor combination is orange and vanilla, although may other types are available today.. You can find this frozen treat in blue rasberry, lime, grape cherry and blueberry.
Cramsicles are easy to make at home. Mix together fruit juice and vanilla ice cream in a large bowl.Then gradually add milk and continue to mix. Finally pour the mixture into small paper cups and place them in the freezer. Once they are partially frozen, insert a popsicle stick into them and place back in the freezer. When they are frozen solid, peel off the paper cup and enjoy the creamsicle.

I don’t make my own, but do keep creamsicles in the freezer all summer long. They are very cooling treat on a hot day. My favorite is the orange and vanilla. They come in a box that I buy at the grocery store.
I like to have one as a reward for a job well done. Whether it’s yard work or house work or even grocery shopping they make for a quick and easy treat. Everyone else in the family seems to enjoy them too, so I keep plenty on hand in case I get company. Thank goodness for my little extra freezer that I have on the porch.
There have been times I wish I’d gotten a full size one. It’s now full and I can’t get anything else in. Both the refrigerator freezer ond it are full. I love to stock up on things and am now working on emptying them out. I can’t buy anything new until I do.
It’s Saturday and usually my day to cook for the weekend, so I’ll be pulling out some lean ground beef that I have on hand. I want to make:
Beef Chimicangas
This is a dish I meant to have earlier in the week, but didn’t get to it so I’ll have them today.
Makes 1 dozen
12 flour tortillas, warmed
1 pound lean ground beef
1 can refried beans
1/2 cups finely chopped onion
3 cans, 8 oz. each, tomato sauce, divided
2 tsp chili powder
1 tsp. minced garlic
1/2 tsp ground cumin
1/2 cup chopped green chiles
1 can, 4 oz., chopped jalapeno peppers
Oil for deep frying
1 1/2 cups shredded cheddar cheese
In large skillet, cook beef over medium heat until no longer pink. crumble beef; drain. Stir in the beans, onion, 1/2 cup tomato sauce, chili powder, garlic and cumin.
Spoon about 1/3 cup of beef mixture off center on each tortilla. Fold edge nearest filling up and over to cover. Fold both sides in and roll up. Fasten with a toothpick. In a large sauce pan , combine the chiles, peppers and remaining tomato sauce, heat through.
In an electric skillet or deep fryer, heat 1 inch of oil to 375 degrees.Fry the chimichangas for 1 1/2 minutes on each side until browned. Drain on peper towels. Sprinkle with cheese. Serve with remaining sauce.
They are best served with guacamole, sour cream and salsa. You can also add rice and beans on the side.
I’ll only be making half this recipe and will still leftover to enjoy again tomorrow. And I’ll do mine in the oven Fryer not in oil. Like I aaid I don’t have room in the freezer to freeze any more.
Today I’m off to visit with DD at her camper and DSIL says he give us a ride in their boat. They are camping along a river that leads out onto Lake Erie. It’s supposed to be a beautiful sunny day and I’ll be going with DS#5 and his family and DS#6 and his family say they will be there too. I’m taking along some pasta salad that I made yesterday to share with all of them.

Creamsicles were never a favorite of mine but I do like popsicles. Your little guy is sure a cutie and dinner sounds great.

I used to love creamsicles, only we called them 'pop-ups.' Orange and vanilla, yep.
Sometimes I wish we had an extra freezer -- particularly with the shortages we're witnessing -- but then I fret about stuff spoiling if we lose power due to a hurricane or tornado.
