ON THE BRIGHT SIDE
MONDAY, AUGUST 16TH, 2021
The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Happy Birthday to you♥
Today is also Bratwurst Day which ihonors a heavily spiced sausage, usually enjoyed on a roll with mustard or by itself with a side of sauerkraut. The term bratwurst is a compound of two German worlds, a beaten, which means to fry and wurst, which means sausage.
Bratswursts originated in Germany and have been around since the 14th century. These sausages are generally made form pork, veal, or beef. Truly dedicated fans attend the annual the annual Bratwurst Festival in Bucyrus, Ohio to celebrate this dish.
To celebrate today, cook up some brats in honor of the day!
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
Love and sausage are alike. Can never have enough of either.
Dean Koontz
I won’t see this DIL today nor will I be going to Bucyrus to the Bratwurst Festival, but I may be having a Brat sandwich for lunch. As usual a card will be going out with lots of birthday wishes and love. I’ll be lighting my birthday candle and thinking of her today.
We have lots of August birthdays in our family and there are more coming up, thankfully, a few of these were or will be celebrated in person.
No Brat recipes today, However on the menu for dinner today is:
20 minute Creamy Italian Chicken Skillet
Makes 4 servings
1 pound chicken cutlets
1/4 tsp. salt divided
1/4 tsp pepper, divided
1 medium zucchini, halved lengthwise and thinly sliced
1 ;cup chopped onion
1/3 cup dry white wine or apple juice
1, 15 oz. can diced tomatoes
2 oz. cream cheese cut into cubes
1 tsp Italian seasoning
1/2 tsp garlic powder
1/4 cup chopped fresh basil
Sprinkle chicken with each 1/8 tsp salt and pepper. Heat 1 tbsp. of oil in a large skillet over medium heat. Add the chicken and cook, turning once until browned and a thermoment inserted registers 165 degrees. Transfer to a plate.
Add remaining oil, zucchini and onion to the pan. Cook, stirring until starting to soften. Increase the heat and add juice. Cook, scraping up any browned bits, until liquid has mostly evaporated. Add tomatoes, cream cheese, Italian seasoning and garlic powers and the remaining salt and pepper. Return the chicken to the pan and turn to coat with sauce. Serve topped with basil. This is good over pasta or rice. I think I’ll be using some penne pasta that I have on hand and sprinkle with a little Parmesan cheese as well.
This is a quick and easy dish for a Monday night dinner.
I hope you all have a GREAT start to this new week. Happy Monday!

Please pray for God's protection of
our troops and HIS wisdom for their
commanders.
Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters
and Paramedics and EMT’s
We ask this through Christ our Lord.
Amen
GOD BLESS YOU ALL!
ADVICE FOR TODAY
There are two things, nobody should ever have to watch being made, sausage and laws.
Mark Twain

A bit of love from someone dear…

Every day is a day to celebrate !
Happy Birthday to your August born family members!! Did I miss seeing your countdown to Fall?
I’m like you, I put all my decorations out for fall but I do take the Halloween ones down after that holiday! Just 2 weeks to September! I’m so excited I feel giddy! Half of my house is a wreck as I decorate but I’m having such a good time! My goal is to get it all done before we go back to the ranch next Monday!!
Your meals always sound so good! I’ve saved so many of your recipes I should put them all in a folder! Recipes From MA!
Another tasty-sounding recipe ... and low-carb, too! Like Linda said, I copy/paste many of your recipes and keep in an on-line MS Word folder ... my nod to the old recipe box.
Tom and I love all sorts of sausage. I wasn't too sure when I read the label -- but we bought some Chicken Chipotle and Monterey Jack sausage and wound up loving it!
Happy :) Birthday!!
