Today is National Lighthouse Day which celebrates this day in 1789 when the United States Congress approved an Act for the establishment and support of lighthouses, beacons, buoys and public piers. This piece of legislation.commissioned the first Federal lighthouse, which was constructed at the entrance of Cheasapeake Bay.A hundred years later, Congress designated August 7th as National Lighthouse Day to commemorate this important moment in history and to celebrate these beautiful structures.
For centuries, Lighthouse have served as beacons of light, guiding ships safely to harbor through the storms, fog, or dark of night.
To celebrate take a drive by any local lighthouse or donate to a lighthouse pereveation society.

We are told to let our light shine, and if it does, we won’t need to tell anybody it does. Lighthouse don’t fire cannons to call attention to their shining - they just shine.

The coasts of Lake Erie have some wonderful lighthouses to enjoy. They’ve been preserved as part of our history. The one in the pictures today is part of a State Park and one I went to see with my sister who since has passed away. It’s so nice to still have these pictures to enjoy and to remember the trips we used to take together.

It was a bright and beautiful day and it was good to be by the lake and catch the plesant breezes blowing across the lake. We had a view for miles and could see our local amusement park across the way and also saw several ships called barges that transport lots of goods to businesses in our state. We didn’t get to see it at night, but they say many are still working.
It’s Saturday and my day to cook for the weekend and on the menu is:
Chicken Paremesan Burgers
Makes 4 servings
3 tbsp olive oil, divided
1 onion finely chopped
2 garlic cloves, minced
3/4 cup marinara sauce, divided
1/2 cup finely chopped or shredded mozzarella cheese
1/2 cup dry bread crumbs
1 tsp italian dressing
1 tsp. dried oregano
1/2 tsp salt
1/2 tsp pepper
1 lb. ground chicken
4 slices mozzarella cheese
4 hamburger buns split and toasted
1/4 cup Parmesan cheese
Fresh basic leaves, optional
In a large skillet, heat 1 tbsp. oil over medium high heat, Add onion and cook until tender, Add garlic and cook 1 minute longer. Remove from heat and cool slightly.
In large bowl, combine 1/4 cup marinara sauce, mozzarella cheese, bread crumbs, seasonings and onion mixture. Add chicken; mix lightly but thoroughly. With wet hands, shape into for 1/2 inch patties.
In the same skillet , heat remaining 2 tbsp. oil, and over medium heat cook burgers until a thermoment reads 165 degrees 4 or 6 minutes on each side Top with mozzarella chese, cook covered until cheese is melted.
Serve in buns , top with remaining 1/2 cup marinara sauce. Parmesan cheese and if desired basil leaves.
I’ll be enjoying some pasta salad along with a sandwich today as I had to make some to take to tomorrow’s party anyway. I always make a little extra so I’ll have some for me.
Tomorrow is our Precious Ones’s birthday party and it’s supposed to be a beautiful day again! Hot but not raining.

How I'd love to see a lighthouse in person some day! Were you and your sister permitted to go inside? Your recipe has my mouth watering -- but since I've eaten burgers the last 3 days we're going with a pot roast in the slow cooker.
