Today is Toasted Marshmallow Day which is celebrated as summer comes to a close and is the perfect opportunity to light a fire-it and toast up some marshmallows.
The history of the marshmallow dates all the way back to Ancient Egypt. The Egyptians harvested the sweet gooey extract of the mallow plant and used it to make candy. It was a very special treat reserved exclusively for gods and royalty. The modern day marshmallows we know and love today emerged during the 19th century.
To celebrate today, grab a stick and a bag of marshmallows and head outside to toast some over the fire. Enjoy the last few weeks of the summer season.

THOUGHT FOR TODAY
I don’t have any marshmallow pictures today, but I do have some of the wonderful fire pit we had when I used to camp. We spent many wonderful evenings around this fire and many times we did roast marshmallows. I love them made in to S’mores.
I no longer have a fire pit but many of my children do so hopefully soon I can roast some marshmallows over one. Summer just isn’t complete without one.
It’s Monday and my day to cook something new here and on the menu is:
Fresh Corn and Tomato Fettuccini
Makes 4 servings
8 oz uncooked fettuccine pasta
2 ears sweet corn, husked
2 tsp plus2 tbsp. olive oil
1/2 cup sweet red pepper
4 green onions, chopped
2 medium tomatoes, chopped
1/2 tsp salt
1/2 tsp pepper
1 cup crumbled feta cheese
2 tbsp. minced fresh parsley
In a dutch oven cook fettuccine according to package directions, adding corn during eh last 8 minutes of cooking.
Meanwhile in a small skillet, heat 2 tsp. oil over medium high heat. Add redd peppers and green onions, cook and stir until tender.
Drain pasta and corn, transfer pasta to a large bowl. Cool corn slightly, cut corn from cob and add to pasta. Add tomatoes, salt, pepper and remaining oil and the pepper mixtures, toss to combing. Sprinkle with cheese and parsley
I don’t have feta cheese but do have ricotta so i’ll be using it as a substitute in this recipe.Other than that it sounds like a quick and easy dish for a Monday night. I did have some leftover corn on the cob from the weekend so I'll just cut that up in the pasta.
It’s looking like we may be a little cooler this week, instead of temps near 90 we’ll be in the upper 70’s which is just about perfect as far as I’m concerned.

That fire pit looks so enticing! I'm thinking Tom and I need one of our own. Linger longer once the nights grow cooler v. sitting and staring at the TV.
