Today is National Vanilla Custard Day which celebrates a sweet pudding like dish made with vanilla, eggs, sugar and milk. It can be enjoyed on it’s own or as a topping for other desserts.
Vanilla custard has been around since the Middle Ages and was traditionally used as a pie filing. A very simple custard tart was a popular dessert during that time period. Today custard is an important component in may dessert recipes including eclairs, triffle, and Boston Creme Pie.

My dad’s favorite pie was a custard pie and my mom made them often for him. I learned how to make them from her and used to make them for my dad too. I have what is needed to make one today, so I’ll be making a custard pie for dessert tonight.
Mom’s Custard Pie
Makes 8 servings
Dough for single crust pie
4 large eggs, room temperature
1/2 cup of sugar
1/4 tsp salt.
1 tsp. vanilla extract
2 1/2 cups milk
1/4 tsp ground nutmeg
Roll dough on lightly floured surface to 1/8 inch thickness. Transfer to an 9 inch pie plate. Trim curst to 1/2 inch beyond the plate, flute the edge. Refrigerate 30 minute. Preheat oven to 425 degrees. Line unpricked crust with a double thickness of foil. Fill with pie weights like dried beans or uncooked rice. Bake on a lower oven rack until edges are light golden brown. Remove foil and weights, bake until bottom is golden brown, Cook on a wire rack, reduce oven setting to 350 degrees.
Separate 1 egg, set the white aside in a large bowl and let stand 15 minutes. In a small bowl, beat the yolk and remaining eggs just until combined. Blend in the sugar , salt and vanilla, Stir in milk. Beat reserved eggs white until soft peaks form, fold into egg mixture.
Carefully pour into crust. Cover edges of pie with foil. Bake 25 minutes. Remove foil, bake until knife inserted in the center comes our clean. 15 to 20 minutes longer. Cool on a wire rack. Sprinkle with nutmeg. Store in the refrigerator.
My mom never set aside an egg white but mixed all the eggs together from the start. I still do that too. Not every one will like the nutmeg, but I do so I use it but sparingly. Too much will ruin the flavor of the pie. We don’t weight the foil on the pie crust when baking either, Just make sure it is nicely browned all over and doesn’t burn when baking the filling in the pie.

I’ve no pie pictures to share today, but do have lots of summertime in Ohio, so that is what the pictures are of today. We’re having some rainy weather here this week so it’s a good time to make our own sunshine ! A couple of my friends are coming over for lunch.

Egg custard was my father's favorite pie, too. Lucky for him, I wasn't so fond of it as a child. Now, however, just the thought is making my mouth water.
