Today is National Lemonade Day which celebrates a delicious and refreshing summertime beverage.
Lemonade originated in the Mediterranean region in the 13th century, and the recipe eventually made its way to Europe. From here it arrived in America . The beverage was sold as an everyday refreshment and as a tonic used to treat colds and other ailments.
In France, you could purchase a glass from street vendors known as lemonadiers.
To celebrate today, make your own lhomemade lemonade to enjoy . Dissove 2 cups of sugar in a cup of hot water. Then stir in 2 cups freshly squeezed lemon juice and 1 gallon of cold water.
Pour into glasses filled with ice and garniah with a lemon slice and a sprig of mint. Enjoy!

I make homemade lemonade here often. I squeeze two lemons, add the juice and 1 cup sugar in cold water and mix it up. It’s a simple and easy way to fix it. My family all love it and it’s easy enough to make for a crowd. It’s a healthy and refreshing drink that is hard to beat in the summer.And it’s good for you too!
It’s Friday and time to make a new dish to eat for dinner. On the menu for today is:
Cheesy Zucchini Quiche
Makes 8 servings
Dough for a single crust pie
3 tbsp butter
4 cups thinly sliced zucchini, about 3 medium
1 onion, thinly sliced
2 eggs, room temperature
2 tsp. dried parsley
1/2 tsp. Salt.
1/4 tsp pepper
2 cups shredded mozzarella cheese
2 tsp. prepared mustard
Preheat oven to 400 degrees. I’m using a already prepared pie crust.
In a large skillet , heat butter over medium heat. Add zucchini and onion , cook and stir until tender. Drain and cool slightly.
Whisk egges and seasonings until blended. Stir in cheese and zucchini mixture. Spread mustard over pastry shell; add filling.
Bake on a lower oven rack until knife inserted in center comes out clean and crust is golden brown. 35 to 40 minutes. Cover mede loosely with foil during the last 15 minutes to prevent over browning. Let stand 10 minutes before cutting.
Using a frozen pie crust makes this recipe easier than ever. You can even make it without using a crust at all. Just spray the pan and add the ingredients and bake.
It’s good for a brunch, but I’m having it for dinner along with a refreshing glass of lemonade..

I love lemonade! Back in the 70's my ladies group 'manned' the lemonade stand at the West Texas Fair ... oh my, what a sticky mess we were!
