Today is National She’s Funny That Way Day which is a day to pay tribute to the women that make us laugh. Show appreciation to the humorous side of a woman, the things they say and do. Some humorous women on TV, both past and present include Lucille Ball, Carol Burnett, Jane Curtin, Ellen DeGeneres, Tina Fey, Whoope Goldberg, Chelsea Handler, Jan Kaczmarek, Phyllis Diller, Betty White, Amy Poehler, Wanda Sylke and Gilda Radner.

I do believe laughter is the best medicine and keeping your sense of humor is important. If nothing else, I can alauys laugh at my self. Some things I do are just so crazy, I can help but laugh about them. It’s better than crying anyway.
Thank goodness I have a lot of people in my life that make me smile and that is what is in my pictures today. Family with lots of smiles.
It’s Wednesday my day to cook and to also make up my grocery list so I’m sharing what’s on the menu for today and for all of next week too.
On the Menu for today:
Vegetable and Beef Stuffed Red Peppers
Makes 4 servings
4 medium sweet red peppers
1 lb. lean ground beef
1 tbsp. olive oil
1 zucchini, chopped
1 yellow summer squash, chopped
1 onion, chopped
1/3 cup finely chopped green pepper
2 cups coarsley chopped spinach
4 cloves garlic, minced
1 cup long grain and wild rice
1 can, 8 oz. tomato sauce
1/2 cup shredded mozzarella cheese
1 1/4 tsp salt
2 slices provolone cheese, halved
Preheat oven to 350 degrees. Discard tops from red peppers and remove seeds. . Cook peppers in boiling water until crisp tender. drain and rinse in cold water
In large skillet cook beef over medium heat until no longer pink, breaking into crumbles. Remove with slotted spoon, pour off drippings.
In same pan heat the oil over medium heat, saute zucchini, yellow squash, onion and green pepper until tender. Add spinach and garlic, cook and stir until spinach is wilted. Stir in beef, rice and tomato sauce, mozzarella cheese and salt.
Place red pepper in a greased baking dish and fill with meat mixture. Bake covered until peppers are tender. 35 to 40 minus. Top with provolone cheese . Bake uncovered until cheese is melted.
I didn’t have any spinach so I substituted baby kale that I did have on hand. It should work out just fine.
This is a good way to get more vegetables into your diet without even thinking about it. Mixed with the meat and rice, kids won’t even notice they are eating vegetables they wouldn’t usually like.

Monday - Spicy Weight Loss Cabbage Soup
Wednesday -Italian Turkey Meatballs
Friday - Salmon and Asparagus with Lemon Garlic Butter Sauce
Weekend - Grilled Buttermilk Chicken
It’s a bit colder today but not too bad so I’m going to get out of the house and get my shopping done.

Laughter is the best medicine.
It is true, there is nothing like a good laugh to make you feel better. I am impressed with how faithful you have been to your cooking schedule and many of the recipes have sounded really good.

Yum(!!!) on the stuffed peppers! I never had them until a couple years ago ... about the same time I realized I love veggies! I'm going to Google your spicy weight loss soup. The last time I made one of those it was far too bland.
Yep on laughing at ourselves. I often do so many silly things and have to laugh at my own expense.
Laughter really IS the best medicine... and it's kinda like exercise for our insides. :)
