Today is St. Patrick’s Day which honors St. Patrick who is hailed as the patron Saint and national apostle of Ireland. People have been celebrating St. Patrick’s Day for over a thousand years. He was born and raised in Roman Briton during the fifth century. At the age of 16 he was captured and sold as a slave to an Irish sheep farmer, but he eventually managed to escape. He spent several years in a monastery before returning to Ireland as a Christian missionary.
Over the years this day has evolved from a religious observance to a worldwide celebration of the Irish culture. In Ireland, men wear shamrocks on their jackets and caps and women wear green ribbons in their hair.
One of the most famous Irish legends of St. Patrick was about the way he explained the concept of the Christian Trinity through the Irish Shamrock. Much as the shamrock is made up of three leaves, as do the Father, Son and Holy Spirit make up the Christian God, The shamrock metaphor remains strong in Irish Christianity and St. Patrick is often depicted wearing a shamrock.
Whether you have Irish ancestors or not, wear something green or eat something green today in honor of this famous Irish holiday.

Irish Greeting
I’ll be wear my green today and celebrating my Irish Ancestors. I’m making another irish dish for dinner today too.
On the menu is:
Slow Cooker Corned Beef and Cabbage
Makes 8 servings
4 carrots, peeled and cut into matchstick pieces
10 baby red potatoes quartered
1 onion, peeled and cut into bite size pieces
4 cups water
1 4 lb. corned beef brisket with spice packet
6 oz. beer or beef broth
1/2 head cabbage coarsely chopped
Place, carrots, potatoes, and onion in bottom of slow cook, pour in water and place brisket on top of vegetables. Pour beer over brisket. Sprinkle on the spice packet. cover and set cooker on High.
Cook the brisket for about 8 hours. An hour before serving stir in the cabbage and cook one more hour.
Serve with some warm soda bread for a delicious meal. You don’t need to use beer but can use Beef Broth instead. Even though the irish originally used Irish bacon instead of corned beef it was adapted when they came to American and found it cheaper to used the corned beef brisket.
It’s also my day to go grocery shopping and as usual I’ve made up a menu to do my shopping list from.

Wednesday - Corned Beef Quiche
Friday - Snappy Tuna Melts
Weekend - Creamy Chicken Rice Soup

I hope you have a Happy St. Patrick's day! It's a beautiful sunny day here in the 60's!
Your grands look so great in their St. Paddy's Day hats! Would you believe, I've never had corned beef and cabbage? Tom brought me hickory smoked ribs from our favorite BBQ spot, and we're keeping a close eye on the radar. The weathermen are calling today a storm of the decade. Little to do but keep a helmet on our heads and prayer in our hearts. Enjoy your dinner!
