Today is National Anthem Day which honors Francis Scott Key who wrote a poem in 1814 called Defense of Fort McHenry. He penned the verses after witnessing the British attack on Baltimore Harbor during the war of 1812. The sight of the Ameriam flag flying triumphantly over Fort McHenry in the morning inspired his legendary words.
Key decided to set his piece to music; and borrowed the tune from a popular song called, To Anacreon in Heaven. Not long after it was first published, people began referring to the piece as the The Star Spangled Banner. The song became an over night successs and bands began playing it during public events and military occasions. In March of 1931 over a hundred years after Key wrote it, The Star Spangled Banner became the official national Anthem of the United States.
Today is a day to refresh your memory and memorize the words including verses two three and four.

I certainly knew the first verse of our anthem, but not all the others so I’ve used the four verses as my quotes for today. What wonderful words and well worth sharing.
It’s mid week and time for me to do my shopping so I made my menu for next week and it’s shown below:
Monday -Slow Cooker Split Pea Soup
Wednesday - Red Pepper Meat Loaf
Friday- Citrus Scallops
Weekend -Balsamic Roast Chicken
It’s going to be a beautiful day to go out shopping with sunny skies and temps in the 50’s. I’m thankful for this respite in the weather because tomorrow is going to be colder in the 30’s again and maybe snow too.
On the menu for today is
Quick Beans and Rice Burritos
Makes 8 servings
2 cans black or pinto beans, rinsed
4 tsp. chili powder
1 tsp. ground cumin
2 cups shredded Cheddar Cheese
1 cup chopped grape tomatoes
4 scallions, chopped
1/4 cup chopped pickled jalapeños
2 tbsp.chopped fresh cilantro
8 8 inch whole wheat tortillas, at room temperature
2 cups brown rice
Mash beans in a large bowl with chili powder and cumin until almost smooth. Add cheese, tomatoes, scallops, jalapeños and cilantro; stir to combine.
Spread about 1/2 cup of filling on the bottom third of each tortilla and tope with 1/4 cup rice. Roll up snuggly.tucking in the ends as you go. If serving immediately transfer to a microwave safe plate, cover with a paper stool and microwave on high until steaming hot. If freezing, wrap each burrito in foil.Freeze up to 3 months.
to Heat remove a burrito from foil and place on a microwave safe plate. Cover with a paper towel and microwave until steaming hot. 1 1/2 to 2 minutes.

That song has always brought tears to my eyes. I've heard all verses but have only memorized the first. Enjoy those yummy burritos and enjoy getting out on a nice day to shop too!
I'm not a great singer, but I so love the National Anthem. Must confess, I don't know all the verses, so I appreciate you providing this little 'refresher' course. I'm looking forward to your slow cooker split pea soup recipe ... yum!
