Today is also International Woman’s Day which celebrates the first celebration which took place in 1911. More than one million people in Austria, Denmark, Germany, and Switzerland attended rallies and events to campaign for woman’s rights and to end gender descrimination.
Today, is an opportunity to recognize all the economic, political and social achievements women have accomplished throughout history. In the fifteen countries where it is an official holiday, Women’s Day is similar to Mother’s Day. People honor their mothers, wives, friends and colleagues with flowers and small gifts.
To celebrate today, show your support and learn about how you can help in your community.

I love being a woman and therefore a mother too. I like everything about it and wouldn’t want to be anything else but what I am. It’s hard to believe that there was even a time when women couldn’t vote. We were not allowed to own property of our own, and had only what men allow us to do and have.
These days, I can say I’m on my own and don’t need a man to make me who I am. I’m now widowed and have learned to live on my own. I have my own money and my own home. I don’t own it, but rent it and I’m thankful for that too.
Men, in my day always made more money than women did and because of that my retirement income is based on what my husband earned and not my own earnings. As a widow it is one privilege, I’m thankful for. My income is enough to live on and due to my husband I have to say I was able to retire. I’m so thankful for being a wife and a mother too.
I’m happy to see that a woman finally has become Vice President in our country. A great acheivent and tribute to the women in our country. We can do and be anything we want to be.
Great steps have been taken to alleviate gender discrimination. We all have our differences but should be treated equally.
It’s my day to cook a new meal for this week and I have a new recipe to try out.
Slow Cooker Split Pea Soup
Makes 8 servings
2 tablespoons olive oil
6 oz. diced ham
1 1.2 cups chopped carrots
1/2 cup chopped celery
2 tablespoons minced garlic
1/2 tsp black pepper
6 cups chicken stock
1 pound dried split peas
1 cup chopped peeled potato
1 tsp salt
1 1/4 tsp. fish thyme leaves for garnish
Croutons to serve with
Heat 1 tbsp. oil in large nonstick skillet over medium high heat. Add ham, onions, carrots, celery, 1 tbsp of garlic and 1/4 tsp pepper. Cook, stirring often until mixture is lightly browned and vegetables are slightly softened. Transfer fo a slow cooker.
Stir in stock, split peas, potato and salt and 1/4 tbsp thyme. Cover and cook on low until peas are tender. About 8 hours.
Meanwhile you can preheat the oven and make your own croutons if desired. I had plenty on hand so skipped this step. Ladle the soup into bowls, Top evenly with croutons
I like to start the week off with a pot of soup so that I have leftovers for lunch during the week. Even though we’re to be warmer today, in the 60’s, it’ll still be cold enough to enjoy the soup. I’ve had some leftover ham in the fridge for awhile an need to use it up. I had plenty to make this soup. It’s a great way to use leftover ham.
The best way to tell if your ham is ok to eat is to small and look at it. Signs of bad ham is a sour smell and a slimy texture. Discard any ham with an off smell or appearance, do not taste first.
I try to live by the motto of waste not and want not.
