Today is Spring Equinox which is the first official day of Spring ! Get ready to pack away winter clothes because soon enough we’ll be enjoying warmer weather, much longer days, and the arrival of flora and fauna.
The word equinox means equal night, referring to the fact that days and nights are approximately equal everywhere, and the sun rises and sets due east and west. According to popular folk lore , you can stand an egg on it’s end during the equinox. No one has statistically proven this to be true or false. Try for yourself and see what happens.
The Spring Equinox brings some sure signs of changing seasons, from blooming flowers to chirping birds. It marks the beginning of natures renewal in the Northern Hemisphere.
Celebrate today by wishing family and friends a Happy first day of Spring !

I am sending wishes for a happy first day of Spring to all of you!. This is my favorite season and I will soon be sorting out Spring clothing and storing away the winter things. I’ve barely got all the Christmas things packed away.
As you know I’ve been struggling to catch up with things and hoped to be painting a Welcome sign for Easter, however that is a slow go and now I’ve decided to make it a welcome sign for summer instead. Hopefully now I’ll have plenty of time to get them done for Memorial Day!
Spring cleaning never got done either, and now with changing around the wardrobe, I may get further behind than ever. I’m slower than I used to be, but I don’t stop trying and try to keep moving forward a little each day. A little is better than nothing, so I’m happy.
I just wake up each day thankful for another day and the chance to to do a little more than the day before.
The weather here has decided to cooperate and we’re to have a warmer weekend.Temps in the 50’s and 60’s.
We have a new store in our area and I’m hoping to get out today and take a look. DD has been and she said there is a lot to look at, but they’ve been busy and not all the shelves are stocked very well. We’ll see….
I’m also cooking for the weekend today and on the menu is:
Corned Beef Hash
Makes 4 servings
2 tsp oil
1 onion, chopped
4 cups dice cooked potataes or frozen hash browns
1 cup chopped lean corned beef brisket
1/2 cup chicken broth
1/2 cup fresh parsley
Salt and pepper, to taste
4 eggs
In large cast iron skillet , heat oil over medium high heat. Add onion and sauté until it starts to brown. Add potatoes and cook, stirring until they brown in spots and become crusty. Stir in corned beef and broth and cook, scraping up any browned bits, until liquid is absorbed. Add parsley and salt and pepper.
Meanwhile fill a large skillet with 2 inches of salted water dn bring to a gentle simmer, Break eggs, one at a time onto simmering water. Poach eggs until set to desired firmness.
Divide hash amoung 4 plates. Place eggs on top of hash.
I usually don’t poach my eggs separately but place them right on top the hash in the skillet, then I cover the pan and let the eggs cook until they are done. I like mine with some runny yolk to mix into the hash when I eat it.
This is made a lot for breakfast but in my case it will be for dinner. Breakfast for dinner is always good!

I agree, dandelions are great fun! Your little granddaughter is beautiful. Since our mid-week storms, the weather's turned cold (well, cold for us) and beautiful. Almost like Mother Nature's trying to make amends for her bad behavior. LOL. Tom really enjoys corned beef hash so this recipe deserves clipping! Enjoy your Saturday, Ma!
PS - Nope. My egg refused to stand on end and cracked. That's OK, after 30 seconds in the microwave, the girls enjoyed it atop their dog food. :)
