Today is National Good Samaritan Day which is an opportunity for us to spread good will and show compassion for others in need.
The term Good Samaritan originates from the parable of the Good Samaritan which can be found in the Goapel of Luke.The parable portrays a good natured Samaratan who helps an injured stranger in need, despite their religious and idealogical differences. The term can be understood to encompass all actions that are done unselfishly for those in need.
Celebrate today by volunteering for a local soup kitchen or paying for a strangers coffee, or helping a co worker. However you choose to celebrate make sure to spread kindness and generosity.

A little kindness is a wonderful thing and it’s always a good thing to show you care. I hope you all remember to set your clocks forward one hour tonight before you go to bed so you’re ready on time in the morning.
This Sunday for the first time in ages, I’m going to church and DD and her son will meet me there. After 2 weeks of having received the vaccine, I feel safe enough to venture out. I’ll still be wearing my mask and sanitizing my hands. There are other germs out there besides the virus.
I may keep a mask on hand from now on for when ever I’m in a crowd of people. It couldn’t hurt.
We’re not out of the woods yet as far as the virus goes, but we are slowly getting there. When more and more people get vaccinated we’ll be able to feel safe again and do things together again. Maybe even be able to celebrate the 4th of July with a barbecue!
This my day to cook for the weekend and on the menu is:
Balsamic Roast Chicken
Makes 12 servings
2 tsp. dried rosemary, crushed
2 garlic cloves, minced
1 tsp salt
1 tsp pepper
2 onions chopped
1 roasting chicken, 6 to 7 pounds
1/2 cup chicken broth
1/2 cup balsamic vinegar
Preheat oven to 350 degres. Mix rosemary, garlic salt and pepper. Place onions in roasting pan, place chicken over onions, breast side up.
Pat chicken dry. With fingers carefully loosen skin from chicken, rub rosemary mixture under the skin. Secure skin underside of breast with toothpicks. Tuck wings under chicken ; tie drumsticks together.
Mix broth with vinegar, pour over chicken. Roast 2 1/2 hours or until thermometer inserted in thickest part of thigh reads 170- 175 degrees. Cover loosely with foil if chicken browns too quickly.
Remove chicken from oven , tent with foil. Let stand 15 minutes before carving. Transfer onion and pan drippings to a small bowl. Skim fat, Remove and discard skin from chicken befor serving. Serve with onion sauce.
This will make more than enough for two meals for me so I’ll have extras to use in making sandwiches for lunch this week and it’s always nice to freeze some to have on hand later on. There are many ways to use up leftover chicken.
We’re to be in the 40’s today and mostly sunny so it will be a great morning to get out and about.

Since moving here to the South, I've witnessed so many random acts of kindness ... it truly makes one want to pass it on!
So glad to hear you feel comfortable attending church tomorrow. Until I get my second vaccine, I'm still a little reluctant to attend. Like you, I'm leaning towards wearing my mask for a while longer. Besides, it hides my wrinkles! 🙂
