Today is National Peanut Butter Lover’s Day. Whether you prefer it smooth, chunky, or natural, peanut butter is the perfect addition to any snack. It goes with practically everything. Crackers, pretzels, celery, carrots, apples, bananas, chocolate and much more.
The average person will eat 1,500 peanut butter and jelly sandwiches before his or her graduation from high school. Peanut butter has been popular since the early 1900’s but no one knows who invented it. Today it is a $5000 million industry dominated by household names such as Jif, Skippy, and Peter Pan.
Peanut butter is an excellent source of protein and healthy fats, and can help reduce the risk of coronary heart disease. For the healthiest choice, look for brands that have no oil or sugar added. Celebrate today with a delicious peanut butter snack in honor of the occasion.

Peanut butter is a staple in my pantry cupboard and I always have some on hand. I like it for a snack, a sandwich or use it in baking. It tastes good and is good for us too. This morning I’m having some on a whole wheat English muffin for breakfast. It’s satisfying and delicious. I love how it melts in all the nooks and crannies.
Today is also my day to cook something new as my weekend leftovers are now gone and on the menu is:
One Pot Meatless Chili Mac
makes 8 servings
1 onion, chopped
1 green pepper, chopped
1 tbsp. olive oil
1 garlic clove, minced
2 cups water
1 1/2 cups uncooked elbow whole wheat macaroni
1 can mild chili beans, undrained
1 can, 15.5 oz., great northern beans, rinsed and drained
1 can, 14.5 oz. diced tomatoes, undrained
1 can 8 oz. tomato sauce
4 tsp. chili powder
1 tsp ground cumin
1/2 tsp salt
1/2 cup sour cream
In Dutch oven sauté onion and peppers in oil until tender. Add garlic; cook 2 minutes longer. Stir in water, macaroni, beans, tomatoes, tomato sauce, chili powder, cumin, and salt.
Bring to a boil , Reduce heat ; cover and simmer 20 minutes until macaroni is tender. Top each serving with 1 tablespoon sour cream.
I’ll be having this along with s slice or two of corn bread. They seem to go together.
Thankfully my grocery store has a good supply of whole wheat pasta which is better for us too and I’ve grow used to the taste.The good thing is I’ll have leftovers to heat up later on in the week for lunches too.
Our temps are remaining in the 40’s this week which is certainly a plus as we are to have only one day below freezing, It’s still good soup weather here for us.

I almost bought a jar of JIF the other day, then talked myself out of it. Darn!
I'll never forget, MANY years ago my boss was kidding me about the fat content in the peanut butter I was eating. I'm usually the LAST person on the planet with a timely 'comeback' but that day I had everyone in stitches: "Yes, but just look at my bright, shiny coat."
