Today is National Chocolate Caramel Day which celebrates the union of chocolate and caramel that is arguably one of the most popular and decadent flavor combinations. These two ingredients appear in countless candy bars, ice cream flavors, confections and desserts.
Milton Hershey began his career at a caramel company. In the late 1800’s he began experimenting with ways to improve caramel candy and found some German built machines for manufacturing chocolate. His attention would eventually shift completely to chocolate, but Hershey’s first product was a chocolate covered caramel.
To celebrate today, enjoy some of your favorite goodies with chocolate and caramels. Enjoy !
If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
I happen to have my favorite candy on hand today to celebrate with. They are called turtles. Made with caramel, chocolate and pecans. I got some for my birthday!
I also love turtle sundaes. That’s vanilla ice cream covered with caramel, chocolate and pecans. While chocolate is good on most anything, when you combine it with caramel and pecans, it becomes almost the perfect candy for me.This is a holiday meant for me and I will have a piece of candy or two.
Today is also my day to cook up a healthy meal and on the menu is:
Shrimp and Asperagus Silllet
I had orginally planned to have scallops, however, forgot to get them at the grocery store but I do have shrimp on hand so that’s what I’ll be having.
makes 4 servings
1 lb. shrimp, peeled and deveined 16/20 count size
1 tsp salt
1/4 tsp. pepper
3 tbsp olive oil, divided
1 tbsp.lemon juice
1/2 tsp. lemon zest
1 tbsp.minced garlic
1/4 cup chopped shallots ,1/4 inch dice
1 pound aspargus spears
1 cup baby tomatoes cut in half
Lemon wedges for serving
In a medium bowl combine shrimp with salt pepper, 1 tbsp. olive oil, lemon juice, zest, and garlic.
Trim off the tough bottoms of asparagus and cut into 2 inch pieces.
Heat a large skillet over medium heat, add 1 tbsp of olive oil.
Once the oil is hot, add the shallots, stir and cook until tender and fragrant.
Add the shrimp in one layer to pan. Cook 2 minutes.
Flip shrimp over and cook through 1 minute. Transfer to a serving plate.
Add 2 tbsp. oil to the pan. Once hot, add asparagus spears and sauté until crisp tender, about 4 minutes.
Add the tomatoes and sauté one minute. Add the shrimp back into pan and cook until warmed through. Season shrimp and asparagus with salt and pepper.
Serve immediately with lemon wedges.
This is not only a healthy meal, but also quick and easy to fix. I will be fixing some air fried sweet potatoe fries to have along with this . Air frying is always healthier.
The pictures today are of o trip to an ice cream shop a few years ago with DS#6 and family. I had a delicious turtle sundae there. However I cannot upload any new pictures right now.

My hubby loves anything with chocolate and caramel; those turtles are always a treat to receive.
I'm going to clip that recipe for next time my son and DIL come over. As a teen in Florida he used to LOVE scallops; now I wonder when was the last time they had any.
I love how you cook such good meals for yourself! We have an air fryer in combo with toaster, etc. I haven't used it very much but I will!
