Today is the International Day of Awesomeness, which is the opportunity to celebrate every person, place thing, or idea that is awesome. As the official tag line points out, No one’s perfect, but everyone can be awesome.
A man named Kevin Lawver declared the need for an International Day of Awesomeness in 2007. He was working with an intern named Freddie Mareiro who suggested that the office should celebrate Lawver’s awesomeness. Lawver replied that there should be an International Day of Awesomeness. He posted the idea to Twitter and the rest is history.
This day occurs every year on March 10th which also happens to be Chuck Norris’ birthday. To celebrate today, organize a virtual group of friends and perform feats of awesomeness and have an awesome day!

Today is my day to make my menu for next week and to go grocery shopping. We’re to be in the warm mid to upper 60’s. But I’m not getting too excited as by the weekend it’s to be back in the 30’s again. Meanwhile it’s going to be a lovely spring like day to be out and about.
My menu for next week will be:
Monday -Irish Colcannon Soup
Wednesday -Slow Cooker Corned Beef and Cabbage
Friday - Stir Fried Scallops and Asparagus
Weekend - Corned Beef Hash
On the menu for today is:
Red Pepper Meatloaf
makes 4 servings
2 tbsp. beaten egg
1 1/2 tsp. milk
3/4 cup crumbled cornbread
1/4 c. finely chopped sweet red pepper
2 tbsp. finely chopped onion
dash dried basil
1/2 lb. ground pork
1/2 lb. ground turkey
2 tbsp. barbecue sauce
In bowl, combine first 6 ingredients. Crumble pork and turkey over mixture and mix well. Shape in a loaf and place in a square baking dish. Drizzle with barbecue sauce.
Bake uncovered at 350 degrees for 45 minutes or until a thermometer reads 165 degrees.
This is a nice substitute for the usual beef loaf. It’s moist and flavorful with sweet red pepper and leftovers make for great sandwiches the next day.

I've not used red peppers in my meatloaf (great idea, BTW) but do like combining the ground beef and pork. It's a bright sunny day here headed for mid-80s tomorrow. Thank you for being an AWESOME friend! 🤗
