Today is Chocolate Covered Raisin Day which celebrates Nestle Raisinets which are one of the most popular candies for movie goers. People can’t get enough of the delicious fruit and dark chocolate combination.
Culinary historians believe that humans first discovered raisins when they came across grapes drying on the vine. These sun dried morsels soon became on of the most popular food sweetness, second only to honey. Raisins are an excellent source of fiber, potassium, iron, calcium, and certain B vitamins. Add some dark chocolate into the mix and you’ll also get a healthy does of antioxidants and important minerals.
To celebrate today, enjoy a handful of chocolate covered raisins.

I do happen to have some chocolate covered raisins on hand so will have some for dessert today in order to celebrate. They are good and good for us. They are one of the healthier snacks we can enjoy.
I usually only buy these for holidays and with Easter coming up the are perfect for this time of year. They are a treat!
You can make your own, but I bought the ones I have on hand.
On the menu for today is:
Crustless Corned Beef Quiche
serves 4
cooking spray
6 eggs
1/4 cup milk
black pepper to taste
2 pinches dried dill weed
11 frozen bite size seasoned potato nuggets, such as Crispy Crowns.
1/2 cup chopped corn beef
1/2 cup chopped onion
1/2 cup shredded Cheddar cheese
1/2 cup parmesan cheese
Preheat oven to 350 degrees. Grease a 8 inch pie pan with cooking spray. Whisk eggs and milk together in a bowl. Seans with black pepper and dill.
Place potato nuggets in a large skillet over medium heat; cook and stir until almost thawed, about 5 minus. Add corned beef and onion; cook and stir until onions are translucent. Remove from heat and cool briefly.
Stir potato nugget mixture into egg mixture. Fold in Cheddar Cheese and Parmesan cheese. Pour into pan.
Bake in preheated oven until eggs are firm and cheeses are melted, about 30 minutes. I use a inserted knife to test it, if done, it will come out clean.
This recipe will finish off my leftover corned beef from St. Patrick’s Day. Waste not, want not.
This is supposed to be my day to shop so I’ve also made my menu for next week in order to do my shopping list.

Monday - Slow Cooker Chicken and Wild Rice Soup with Asparagus and Peas
Wednesday - Vegetable and Beef Stuffed Red Peppers
Friday- Easy Crab Cakes
Weekend - Slow Cooked Lemon Chicken

Oh, I adore that bunny 'Welcome' sign! Each season I say I'm going to look for original holiday decor, then wind up missing the boat. After my second shot I want to visit Goodwill and might find a post-Easter something or another.
