Today is World Water Day which honors the state of sustainable fresh water resources around the world. More than 880 million people on the planet do not have access to safe drinking water, and the amount of water we need to drink and produce food, goods and service continues to grow.
The United Nations General Assembly announces the first World Water day in 1993. Every 3 years, participants will attend the World Water Forum to discuss important issues regarding water sustainability, consumption, and access. This is the year for the next World Water Forum.
Today help raise awareness and learn more about this important campaign.

Water is so important to all of us and one thing we often take for granted until we don’t have it. Here I have safe clean running water piped into my house. It’s provided by the utility company in our town. They also provide a facility to make sure our water is clean and safe. We have a good supply of water here with being so close to Lake Erie, but It must be cleaned before it reaches our homes.
It’s tested all the time to make sure it is safe for drinking , however I prefer bottled water for drinks and also buy purified water for my coffee maker, because it says to use it and not tap water.
This past Friday my hot water tank went out. It often does this when we have strong winds like we had last week. This was the 2nd time in the week I had to call for service to relight my hot water tank. Well needless to say they didn’t make it out on Friday and since it was the weekend, no one has shown up to relight it. Believe me when I say it’s been missed. I won’t take a cold shower or do dishes in cold water. Hopefully they’ll finally make it out this morning and I’ll once again be a happy camper. I don’t know how to relight it myself and have to wait for them to do it for me.
Besides the hot water tank is behind an enclosure in one of my closets and it takes a bit for them even to get to it. They have to remove a wall in the closet to even get access to it.
I won’t be taking my water for granted anytime soon, that’s for sure.
On the bright side I do have cold running water and that is a lot more than some people around the world have, so I’m thankful.
It’s Monday and time for me to cook and use up some more of my corned beef from last St. Patick’s Day dinner.
On the menu is
Corned Beef Rubin Sandwiches
Serves 4
2 tbsp butter
8 slices rye bread
8 slices corned beef
8 slices Swiss Cheese
1 cup sauerkraut, drained
1/2 cup Thousand Island Dressing
Preheat a large skillet or griddle on medium heat. Lightly butter on side of bread slices. Spred non buttered sides with Thousand Island Dressing. On 4 slices layer 1 slice Swiss Cheese , 2 slices of corned beef, 1/4 cup sauerkraut and a 2nd slice of Swiss Cheese. Tope with remaining bread slices, buttered sides out.
Grill sandwiches until both sides are golden brown. Serve hot. I prefer to serve them with a dill pickle spear on the side.
If you prefer the tangy taste of sauerkraut you should drain it but don’t rinse it.
I didn’t have an Thousand Island Dressing on hand so I made my own. It’s easy and didn’t take long at all.
Homemade Thousand Island Dressing
1 cup mayonnaise
1/4 cup onion, minced
2 tbsp. ketchup
1 tsp lemon juice
1/2 tsp paprika
1/4 tsp salt
Combine all ingredients in a mixing bowl. Tansfer to a jar with and lid and store in the refrigerator until needed. For the best flavor wait for 24 hours for the flavors to meld. The dressing will keep for about a week.

What’s New at My House

Meanwhile on Monday, I called for service once again and the men came right out and relit my hot water tank. They said they never call the work order on Friday. There was a new guy in the office that didn't know what he was doing. Yay! I'm back in business again with plenty of hot water !
Cold running water is better than no water at all. I hope they get it taken care of for you today!
Oh, thank goodness you've hot water once more! Gosh, the things we take for granted! I'm pretty sure our tap water's good to consume -- but as long as we can afford to do so, I prefer Dasani.
Hope they came a lit the water heater and you can take nice hot shower. The meal sounds great and nothing like homemade dressing.
