Postmen have to be some of the most dedicated people I know. No matter what the weather, they get the mail thru. There are many others that work in all kinds of weather too and we owe them our thanks. I am reminded of those wonderful people that are cross guards that help the school children across the street. They don’t make a lot of money but are out there in all kinds of weather, making sure our children are safe.
Dedication is a trait to be admired, no matter what line of work we’re in. Dedicated people do what ever it takes to get the job done.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
National Salami Day which is a good day, indeed! The versatile Salami is used in many, many ways. It can be eaten by itself as a snack. Cut it into small cubes along with cheese. Or, just cut off a big chunk and nibble on it. Salami is very popular in sandwiches and subs. And, many of us, add it to salads to add a little zing. Basically anyway you can use ham, you can use salami.
My recipe for today uses Salami in a sandwich, which is one of my favorite ways to eat it.
Grilled Salami Sandwich
8 slices Italian bread
3 tablespoons Caesar ranch or creamy Dijon mayonnaise
2 tablespoons butter or margarine, softened
8 slices hard salami
1 small tomato, cut into 8 thin slices
4 slices mozzarella cheese
Heat a 12 inch skillet over medium heat. Spread one side of each bread slice with mayonnaise and other side with butter.
Place 2 bread slices, butter side down, in skillet. Top each with 2 salami slices, 2 tomato slices, 1 cheese slice and 1 bread slice, butter side up.
Cook 2 to 3 minutes or until bottoms of sandwiches are golden brown. Turn sandwiches; cook 1 to 2 minutes or until bottoms are golden brown and cheese is melted. Repeat with remaining sandwiches.
Makes 4 servings

Thst salami sandwich looks good. I do admire our lady postal carrier when she is delivering the mail in the hot weather. She drives from house to house but has to get out of her vehicle to deliver the mail.

I love your four Ds and your quote about the postage stamp. I can't really say that I like salami --- but I do wish they had a national baloney day. I DO love baloney sandwiches--especially fried baloney!

True (that) postal carriers must endure all sorts of conditions.
My favorite story about the U.S. Mail occurred when I was still working downtown St. Petersburg: Because a debt had just been paid, my boss tasked me with retrieving a 'duns' letter we'd posted earlier that day. So, I jumped on the elevator and stepped outside near the mailboxes ...and waited. I didn't realize it's a crime to tamper with the contents of a mailbox, but that mailman was so sweet. Listening to my story, he said, "OK I'm going to unlock this box, and step over there to smoke a cigarette ...." (Can't enforce what he didn't see ... LOL!)
I often think about our postmen/women who work no matter the weather! Ours walks around in shorts all year round. I ofen wonder why he doesn't get cold! I love salami. There is always something to be thankful for, for sure. I try to find something good in every day. Like you I am a half glass full person! Thanks so much for all that you share. I have been very slow to read these past weeks because it pains my knee so much to be at the computer, but I am trying to catch up! xoxo
