Life is a Special Occasion!

Today is Teddy Bear Day. A Teddy Bear is a special friend to children all over the world. He's cuddly. He makes you feel secure in an otherwise insecure world. He's lovable. Your Teddy Bear is both a companion and a comforter. And, he's not afraid of the dark. He'll keep you safe.
During the early 1900s, President Theodore Roosevelt was in office as President of the United States. He was a hunter. While hunting in Mississippi in 1902, he refused to shoot a small bear. The Washington Post picked up on this story, and made a cartoon of the event. Toy store owners, Morris and Rose Michtom, wrote to President Roosevelt for permission to call their stuffed animals Teddy Bears. Teddy bears became wildly popular. Their company went on to become the Ideal Toy Company, one of the largest toy companies in the world.

The cute little Teddy Bear in the picture above is a part of my fall decorations. Teddy bears are cute and cuddly and are fun to have around. This little guy always makes me smile!
One of my favorite Teddy Bears is Winnie the Pooh Bear.
It has been said that if there is anyone who can love unconditionally, it's Winnie the Pooh. The bear shows a great deal of maturity in its understanding of love. We can learn to accept and give love unconditionally from this wonderful character.
If the person you are talking to doesn't appear to be listening, be patient. It may simply be that he has a small piece of fluff in his ear.
If you live to be 100, I hope I live to be 100 minus 1 day, so I never have to live without you.
If there ever comes a day when we can't be together keep me in your heart, I'll stay there forever.
A little consideration, a little thought for others, makes all the difference.
Love is taking a few steps backward maybe even more… to give way to the happiness of the person you love.
Many thanks to A.A. Milne for his book which gives some very wise advice on how to make life more Bear-able. Though the story of the cute bear came out in 1926, Winnie the Pooh continues to rule the hearts of many for almost a century.
Our weather here is continuing to be on cool side but today it’s to be a sunny day. Thankfully I’m enjoying a good cup of hot coffee to warm me up. I have lots of plans for today which include some baking and some painting. I’d also like to make some soup to have on hand for the weekend. We’ll see just how much I actually get done.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is Wiener Schnitzel Day
Wiener Schnitzel is made by tenderizing a thin slice of veal which is then lightly salted and breaded.
Wiener Schnitzel Recipe
6 veal cutlets*
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs, slightly beaten
1tablespoon milk
1 1/2 cups unseasoned dry bread crumbs
6tablespoons oil
Place 1 veal cutlet between 2 pieces of plastic wrap or waxed paper. Working from center, gently pound cutlet with flat side of meat mallet or rolling pin until about 1/8 inch thick; remove wrap. Repeat with remaining cutlets.
In small bowl, combine flour, salt and pepper; mix well. In another small bowl, combine egg and milk; blend well. Coat each cutlet with seasoned flour; dip in egg mixture. Coat with crumbs
In large skillet, heat 3 tablespoons of the oil over medium high heat until hot. Cook 3 cutlets at a time for 5 to 7 minutes or until golden brown on both sides. Repeat with remaining 3 tablespoons oil and remaining 3 cutlets. Serve immediately.
*Boneless pork cutlets or chicken breasts can also be substituted for the veal.

Would you believe, I've never read Winnie the Pooh. (Must add to my post-retirement list!)
I wouldn't have ever thought about substituting pork cutlets or chicken in Wiener Schnitzel. Veal is so pricy, plus I can't bear its origin.
