Life is a Special Occasion!

Today is 911 Remembrance Day also known as Patriots Day. I doubt anyone will ever forget where they were on the morning of September 11, 2001, when they heard of the attacks on the twin World Trade Towers in NYC and the Pentagon in Washington. This horrible and tragic day is etched forever in our memories.
Like the attack on Pearl Harbor that brought us into World War II, the 911 attacks led us into a new war... the war on terrorism. It also touched and changed forever, the lives of each and every American.
On the anniversary of 911, we are encouraged to spend a few minutes reflecting upon this event, and praying for the victims who died, and their families and friends. Each year on this day, American flags are flown at half staff to honor and commemorate those lives lost. Fellow Americans are asked to observe a moment of silence at 8:46 am, Eastern Daylight Time, the time of the first plane collision into the North Tower of the World Trade Center.

I was at my desk at work as usual that fateful day, 9/11/01, listening to the radio when I heard the news. It seemed an impossibility that what I was hearing was real, but it was. I will remember and never forget.
One thing this day taught me more than anything was to appreciate what you have while you have it. Tomorrow may not come. Thankfully, no one in my family was affected by this terrible act but there were far too many others that were.
As a country we pulled together and it was overwhelming how much unity and support was shown at that terrible time. We hope to never see another attack of this magnitude in our country and I do pray daily for peace in this world.
Life as it was before 911 will never be the same for me.
On the bright side, we here in northern Ohio will be a bit warmer this week. Our temps are to be in the mid 70’s for the most part. So I’ll be enjoying the last of these late summer days to the fullest. Life goes on and we must make the most of what we have, while we have it.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It's National Hot Cross Bun Day! A hot cross bun is a sweet, spiced bun made with currants or raisins and leavened with yeast. Just as the name suggests, these baked goodies are marked with a cross on the top, which is supposed to symbolize the crucifixion.
In many Christian countries, these buns are traditionally eaten toasted or hot during Lent, starting on the evening before Ash Wednesday through midday on Good Friday.
The reason that National Hot Cross Bun Day six months after Good Friday is unknown, but we're thankful to have an excuse to enjoy this treat anytime of year!
Easy Hot Cross Buns
Warm and easy hot cross buns for breakfast? Absolutely! The secret is to use refrigerated buttermilk biscuits to cut down on prep. Raisins, cinnamon sugar and homemade icing seal the deal.
1 package refrigerated buttermilk biscuits
1 teaspoon Cinnamon
1 teaspoon packed brown sugar
1/2 cup raisins, divided
1 egg, lightly beaten
5 tablespoons confectioners’ sugar
1 teaspoon water
Preheat oven to 350 degrees. Gently stretch each biscuit into 4 inch circle. Mix cinnamon and brown sugar in small bowl. Sprinkle 1/4 teaspoon cinnamon mixture and 1 tablespoon raisins over half of each biscuit. Fold over plain biscuit half onto raisin half. Fold again, pinching edges to seal. Gently shape into a ball. Repeat with remaining biscuits. Place buns in lightly greased 9 inch cake pan, evenly spacing them apart. Brush bun tops with beaten egg.
Bake 15 to 20 minutes or until golden brown. Remove buns onto cooling rack; cool completely.
Mix confectioners’ sugar and water in small bowl. Spoon into small resealable plastic bag. Cut a small piece from one of the bottom corners of bag. Close bag tightly then pipe the shape of a cross on top of each bun.

I was putting on my shoes and watching Good Morning America that fateful morning. We were taking our one year old grandchild to the State Fair. It was a very eery and scary day!
Like you, I was sitting at my desk when a client called. Because we had no radio or TV, I thought it a joke.
16 years later my former boss and I are a bit estranged ... my co-worker's gone off the grid somewhere in New England. All the same, I've never felt so close to two individuals as I did that awful day.
