Today is Pony Express Day which celebrates those brave souls who made up the unique mail delivery system of the same name. Back in the days of the wild west, there was no Fed Ex, no Postal Service that ran that far west, no planes, and delivery by ship was likely to take months if it ever got there at all. Seeing this need for a specialized delivery service, Leavenworth and Pike’s Peak Express Company took an opportunity to expand into this void. From this important decision was born one of the most iconic pieces of American History, whose influence is felt in hundreds of Pony Express Day Festivals throughout the American Midwest.
These events often have a broad range of related events, including food related events. Chili was one of the staples of the old American West, and as you might imagine there was often a pot of this spicy staple bubbling to keep the riders fed as they came in and out with the packages.
It’s a day to celebrate the pioneer spirit of the Old West!

If having a bowl of chili is a way to celebrate this day, I can do that. I have some leftover chili in the freezer and it will only take a few moments to heat it up. One of my favorite ways to use my leftover chili to is to add some wagon wheel pasta to it for a little variety. Wagon wheels are definitely a part of history too.
Today’s pictures are of a pop-out book that sits here on my bookshelf. It has wonderful pictures and tells a tale about the wild, wild, west. I do love history and I love books. I made some of the pictures larger so you could see the pop out effect.
I think it’s important that we have days like today to remind us of the history of this great country. The pioneers deserve our appreciation for all that they did. Fact of matter we still have pioneers in our country that makes leaps and bounds in our country's progress every day. So today I’ll give a cheer to all pioneers!
It’s another hot day here in our neighborhood. This heat wave has made us feel like it is still summer and not autumn. Summer’s last hurrah seems to be going on and on. The end will surely come though, it always does. While our current weather is very unusual and we’ve set new records for high temps, it is truly Fall after all.
It’s my day to relax and refresh. I’ll be going off to church and then home for a relaxing day. This past week was a very busy one for me and next week is looking to be another one, so some rest is definitely needed.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Cherries Jubilee Day which will make cherry lovers jubilant. If you enjoy cherries, you must absolutely love this day.
Cherries Jubilee is easy to make. All you need is a can of cherry pie filling, some cognac or brandy and vanilla ice cream. Story has it that chef Auguste Escoffier prepared this dish back in the late 1800’s for Queen Victoria’s Jubilee celebration.
If you don’t want to use alcohol in the dish, cherry juice can be substituted for the cognac, and apple juice can be substituted for the brandy. However, if you decide to substitute for the alcohol, your dish won’t flame. It will still taste great, though!
Make today as sweet as a cherry.

Those were great pictures from that book. Do appreciate our mail carriers. We are having cooler than normal weather, very pleasant days enjoyed here.

Tom and I were just talking about chili yesterday! I enjoy it for supper, mixed with cheesy scrambled eggs.
I'm guessing that book is a joy to share with your little ones!
That old pop-up book looks terrific. (And in terrific condition, too!)
Thinking about the Pony Express, the Old West PLUS the talk about chili made me think about that funny scene from "Blazing Saddles" where all the cowboys are sitting around the campfire after eating beans... :)
Guess what? The ONLY thing that I can cook is...chili! My mother in law in England still uses my chili recipe that I gave her 34 years ago. Hey, it is good! :-)
I had a whole big comment written but it disappeared into the ether. I hate it when that happens! Love the book and wild west photos. What a treasure. Appreciate what the Pony Express did. chili with wagon wheel pasta sounds delicious. Wagon wheel pasta is hard to find over here. I found some the other day and they wanted something like almost £8 for a bag of it, the equivalent of about 12 dollars! Of course it had a fancy Italian name! xoxo
