Today is International Peace Day which seeks a global cessation of violence and war. Each year on this day, celebrations are held in hundreds of countries, all with the same goal in mind --to stop war and violence. Created and sponsored by the United Nations, this day seeks to end war, starting today.
Wouldn't it be nice if this one day succeeded and spread, country by country, day by day, until there is no more war or violence.

I’m celebrating the last day of summer here at my house today. I’m making a big pitcher of lemonade and eating out on the sunporch today. This summer has been a good one for me and I’m thankful for the lovely days we’ve had.
This summer was filled with many peace filled and lazy days but Autumn starts tomorrow and life will become much busier. There’s much to do before winter arrives.
Change is in the air. The days are ending earlier, the summer heat is dying down, and these are only signs of bigger things to come.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Pecan Cookie Day which recognizes the creation one of the worlds most perfect cookies. Pecans were originally found in Mexico, and were quickly adopted and spread when American colonists first discovered them. They became something of a staple of the American South, becoming the foundation for that most important of pies, the pecan pie.
Pecan Cookies
1 c butter, Softened
2/3 c Dark Brown Sugar, Packed
1 Large Egg
2 c Flour
1/2 t salt
1 1/2 c pecans, halved
Cream together the butter, egg, and brown sugar in a bowl until they are blended. Add flour and salt while mixing until thoroughly blended, and then refrigerate for an hour. While cooling the cookie batter, start preheating your oven to 375 F. Once the cookie dough has finished cooling, make into 1 inch balls of dough, and place them on a cookie sheet 2 inches apart. Take a glass and dip the bottom in flour, and use it to flatten the balls. Once it’s down, press a pecan into the top of the dough.
Then bake for 10 to 12 minutes until they’re a light golden brown, let cool, and serve!
