Take a break.

I will be the first to admit, I’m a lazy mom. The nice thing about getting older is that I can pretty much do as I want, but I know it’s hard for young moms to take a break. There is always something to be done. Sometimes though, it’s nice to give yourself a break from the daily routine. Even if it isn’t for a whole day, a short break is good for you.
Today I’m hoping that my internet woes are fixed. I had a repairman come out and he assured me all is good. We’ll see... They were supposed to be here on Wednesday, but didn’t make it until Thursday. I’ve had a very poor connection for about a week now and something had to be done.
Yesterday was dark and dreary so I decided to make some Apple Fritters. I’d never made them before but found an easy recipe using Bisquick and they turned out quite well. At least I had no problem at all eating them and that is what today’s pictures are of. The bag apples is still halfway full so today I make make homemade applesauce or apple cake. That would be good to have on hand for the weekend.
It’s to be a nice day so I’m going to get out and run some errands and do some shopping while the sun shines. We’re having a taste of fall for a couple of days here with cooler temps in the 60’s.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It is National Cherry Popover Day. Cherry Popovers are tasty treats made from an egg batter and flour mix. This doughy muffin is filled with cherries, then baked. It is baked in either a muffin tin, or a special popover tin. either, way it is totally delicious!
I’ve never made this recipe, but it does sound quite easy so I’ll be saving it to try out soon. Of course my picture isn’t of popover batter, but just think cherries.
Easy Cherry Popover
3 eggs
1 1/2 cups milk
1 1/2 cups flour
1/2 teaspoon salt
1/4 cup butter, melted
2/3 cup pitted cherries
Preheat oven to 450 degrees. Combine flour salt, and butter. Beat until smooth. Beat in eggs one at a time. Stir in cherries.
Let batter rest at room temperature for 15 minute. Meanwhile butter or grease 12 muffin cups. Place in oven to preheat.
When batter has rested, carefully remove pans from oven. Fill each cup about 3/4 full. Bake 20 minutes. Reduce heat to 350 degrees and bake 10 to 15 minutes longer, until puffed and golden brown.
Remove pans from oven. Carefully pierce a hole in the top of each popover to let steam escape. Cool 5 minutes before serving.

Yum on the apple fritters! Hope your internet problems are a thing of the past. So agree that moms need to take a break when they can. Young moms are constantly on the go.
