Today is May Day which has been celebrated on the first of May for hundreds of years, but for two different reasons. Our modern observances have both green roots and red roots. For some people May Day is a celebration of Spring - a tradition that comes from the Pagen festival of Beltane. For others May Day is a celebration of workers rights marked by rallies, parades and marches. In 1958, President Eisenhower declared that the 2nd type of May day celebration were communist and created a new holiday called Law Day to take its place.
One of the more popular May Day celebrations is the maypole dance, which was created by the ancient druids of the British Isles. During the Beltaine festival, people preformed a circle dance around a pole. This dance evolved over the years to include ribbons and standard weaving patterns we still use today.

Tis said that May is the Month of Merriment and I’m happy today today is the beginning of a new month. When I was a child in school, we always danced outside around a Maypole. It had colorful ribbons and flowers on it. We also made little baskets of paper flowers to take home to our parents or loved ones. We’d hang the baskets on the door and leave them as a gift. They say that April showers bring May flowers so they are a popular gift to give this time of year.
Today it’s to be in the mid 60’s so we are finally beginning to warm up again and we should also see some sunshine today. Happy May Day !
Its my day to cook for the weekend and on he menu is:
Lemon Dijon Pork Sheet Pan Supper
Makes 4 servings
4 tsp. Dijon mustard
2 tsp lemon zest
1 clove garlic, minced
1 tsp salt
2 tablespoons oil
1 1/2 lbs. sweet potatoes, about 3 medium, cut into 1/2 inch cubes
1 lb fresh Brussels sprouts
4 bonesless pork loin chops
coarsely ground pepper, optional
Preheat oven to 425 degrees. In a large bowl, mix first 4 ingredients; gradually whisk in oil. Reserve 1 tbsp. mixture. Add vegetables to remaining mixture, toss to coat
Place pork chops and vegetables in a 15 by 10 by 1 inch pan coated with cooking spray. Brush chops with reserved mustard mixture. Roast 10 minutes.
Turn chops and stir vegetables, roast until thermometer inserted in pork reads 145 degrees and vegetables are tender. About 10 to 15 minutes longer. If desired, sprinkle with pepper. Let stand 5 minute before serving.
Cutting the Brussel sprouts and sweet potatoes into fairly small pieces means they will be tender by the time the pork is done. Sweet potatoes are an excellent source of vitamin A and Brussels sprouts are loaded with vitamin K.
1 pork chip with 1 1/4 cups of vegetables equals one serving. I’ll be having this with a side salad for dinner. I bought a prepackaged Cesar salad that sound pretty good.
It would be nice if my yard dries out enough from all the rain so I could get the grass cut today. It needs it badly.

I don't recall a dance around the flag pole, but yes. I made lots of construction paper 'vases' and left on our neighbor's doors.

What a wonderful memory you have for mayday. No memories of celebrations for me so it was nice to hear yours. So funny you are happy it is going to be 60 there and we are in the 90's here and the 100's are right around the corner.
