Today is Cinco de Mayo which celebrates Mexican heritage and culture. Cinco de Mayo is often confused with Mexican Independence Day but it commemorates the Mexican army’s victory at the Battle of Pueblo during the Franco-American War in 1862. Mexico declared its Independence over 50 years earlier. This battle was over unpaid debts owed to European governments.
Its a fairly minor holiday in Mexico but celebrations in the United States are a different matter.People mark the occassion with elaborate family feasts, parties, mariachi music and traditional folk dancing.
To celebrate today, mix up a delicious margarita recipe and have a party!

Cinco de Mayo has come to represent a celebration of the contributions that Mexican Americans and all Hispanics have made to America.

The Mexican hat shown in today’s pictures has been around for several years. I got it when I went out to dinner with DDH and two of our friends. They surprised me with a birthday cake and the people in the restaurant put this hat on my head and sang Happy Birthday. It was not my birthday. I’ve used it for my party hat ever since. It hangs on my coat rack and I bring it out whenever there is a special occasion.
There is no party here today, however, it’s my day to go grocery shopping. It’s one of my busiest days of the week. I have made up a new menu to shop by and here it is.
Menu for next week
Monday - Wild Rice Mushroom Soup
Wednesday-Grilled Pork Tacos
Friday- Pesto Corn Salad with Shrimp
Weekend - Chicken and Spanish Cauliflower Rice
Thankfully, I don’t have to get much as I’m trying to clean out my freezer which is now full to overflowing. I need to get rid of the old to make room for the new.
On the menu for today is:
Zingy Baked Chicken Nuggets
Makes 6 servings
1/4 cup plain yogurt
1 tbsp. lemon juice
1 1/2 tsp. seasoned salt
1 tsp. garlic powder
1 tsp ground coriander
1/2 tsp cayenne pepper
1 1/2 pounds boneless skinless chicken breasts cut into 1 1/2 inch pieces
2 cups whole wheat bread crumbs
Honey mustard, optional
Preheat oven to 400 degrees. Mix first 6 ingredients; stir in chicken to coat
Place bread crumbs in a shallow bowl, add chicken, 1 piece at a time and toss to coat. Place 1 inch apart on a greased baking sheet.
Bake until lightly browned and chicken is no longer pink, 18 to 20 minutes. If desired serve with honey mustard.
I’ll be having mine with a side of Sweet Potato fries and some cole slaw.

What a terrific memory associated with that hat! I'm smiling, imagining what fun was had. No Mexican food on our menu today ... Tom made himself a Chicago dog and I did another pot of chicken detox soup. Happy Cinco de Mayo!
