As I’ll be going out to do my grocery shopping today I will be looking for a cheese cake to enjoy. I don’t have a favorite but lueberries are good and so good for us too.
I’ve made up a menu to do my shopping from and the menu for Next week is
Monday -Grilled Pimiento Cheese Sandwiches
Wednesday -Easy Jambalaya
Friday - Tuna Croquettes
Weekend - Caoprese Chicken with Bacon
And on the menu for today is:
Creamy Lemon Chicken Parmesan
Serves 4
1/2 cup flour
2 eggs, lightly beaten
3/4 cup whole wheat breadcrumbs
1/2 cup grated Parmesan cheese, divided
1 tsp. Italian seasoning
1 tsp garlic powder
4 chicken breast cutlets
1 tbsp. olive oil, divided
2 cloves garlic, minced
1 cup chicken broth
1/4 cup lemon juice
1/4 tsp. salt
1/2 cup half and half
1/4 cup chopped fresh parsley
Preheat oven to 400 degrees. Place flour in a shallow dish. Place beaten eggs in another shallow dish Combine breadcrumbs, 1/4 cup Paremesan, Italian seasoning, and garlic powder in a third shallow dish. Working with one at a time, coat each cutlet in flour, tansfer to egg mixture and turn to coat. Transfer to the breadcrumb mixture and turn to coat. Reserve 1 tbsp. of flour , to cook later. Discard any remaining egg and breadcrumbs
Heat 1 tablespoon oil in a large skillet over medium high heat. Add 2 cutlets and cook, flipping once, until golden. Transfer to a large baking sheet. Reduce heat to medium and add another tbsp oil to the pan. Add remaining cutlets and cook, flipping once until golden on both sides. Transfer to baking sheet. Bake the cutlets until cooked through, about 10 minutes.
Meanwhile, wipe out the pan, Add the remaining oil and heat.Add garlic and cook until fragrant. Add broth, lemon juice and salt to pan. Bring to a boil. Whisk half and half into reserved flour. Add to the broth mixture and cook. stirring frequently, until reduced by about half and thickened enough to coat the back of a spoon. Remove from heat.
Transfer cutlets to a large platter. Drizzle with sauce and top with the remaining 1/4 cup of Parmesan cheese and parsley.
I’ll serve this with some whole wheat cooked pasta, and it will make a wonderful dinner today.

Showers are moving in our way today hopefully I'll get out and back awhile it's dry.
Blueberry cheesecake sure sounds good and so does your dinner for tonight and you menu for the week. I hope you don't get caught in the rain today!
Cheesecake is my most favorite 'sweet' ... whether it's with or without toppings! The blueberries definitely add a refreshing taste of Summer. I didn't realize the difference in cheese outside the U.S.!
