Today is Memorial Day which is a holiday that commemorates and honors all the men and women who died while serving our country. This holiday was originally founded to honor the soldiers who gave their lives in the Civil War, but has since been expanded to include all wars involving the United States military, it has been recognized as a federal holiday since 1971.
Traditional Memorial Day observances include visiting cemeteries and memorials as well as attending parades and dedications. A National Moment of Remembrance also occurs at 3 p.m. local time across the nation.
Memorial Day weekend is the unofficial kickoff to summer. Be sure to break out the grill for a Memorial Day cookout.

Thankfully this is the best weather day we’ve had for quite awhile. The sun will come out and we’ll be in the 70’s. I’ll be joining my daughter and her family for a cookout later on today.
I usually would be cooking for myself today, but thanks to her I won’t have to. Still I’ll make the following recipe tomorrow.
Slow Cooker Vegetable Minestrone Soup
Serves 8
4 carrots, peeled and chopped
3 stalks celery, chopped
1 red onion, chopped
3 cloves garlic, minced
2 cups green beans, cut into 2 inch pieces
2 cans red kidney beans, rinsed
2 15 oz cans diced tomatoes, undrained
6 cups vegetable broth
2 tbsp. Italian seasoning
1 tsp. crushed red pepper
1/4 tsp. salt, divided
1/2 tsp ground pepper
1 zucchini, chopped
4 oz. whole wheat pasta, elbows or other small pasta
1/2 cup grated Parmesan cheese
Combine carrots, celery, onion, garlic, green beans, kidney beans, tomatoes, broth, Italian seasoning, crushed red pepper, 1/4 tsp. salt and pepper in a large slow cooker. Cover and cook on low for 4 to 6 hours.
Stir in zucchini, pasta and the remaining 1/2 tsp salt. Cover and cook until pasta is tender.About 20 minutes more. Serve immediately topping each serving with about 1/2 tablespoon Parmesan.
Serving size is 2 cups soup.
The leftovers will be good to have for lunch later in the week.

I think there's never a wrong time to enjoy soup! I'll just sit under the A/C and pretend it's not hot and humid outside. Enjoy your BBQ with your daughter and family!
