ON THE BRIGHT SIDE
FOR TUESDAY, MAY 11TH, 2021
The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a special occasion!

Today is Eat What you Want Day, which is a day to ignore your diet and indulge in foods you love most. Spread the word about the unique holiday! While junk food is certainly acceptable today, dpm’t forget to include your favorite meals as well. Perhaps you’d like to recreate Thanksgiving dinner, or a childhood classic like mac and cheese and pigs in a blanket.
Dieting is a relatively new phenonomnaon. Our ancestors were concerned with getting more carbohydrates and fats into their systems, not less. The first diet programs appeared in the U.S. during the 19th century and today people are still trying to all sorts of crazy things to lose a few pounds.
To celebrate today, eat all your favorite healthy and not so healthy foods in moderation. I hope you enjoy every bite!
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
The only way to keep your health is to eat what you don’t want, drink what you don’t like, and do what you’d rather not.
Mark Twain
I still think everything in moderation is the way two go. Might as well enjoy a little bit even if you can’t have a lot. It’s when we get out of proportion on the portions of food that we eat is when we need to diet. Due to high blood pressure and a high sugar count, I had to start watching what I eat. No doubt about it, I was eating too many sweets. I like my donuts and sweets. Now I try to avoid them because I don’t want to become diabetic. I’ve developed a healthy eating plan and on the menu for today is:
Wild Rice and Mushroom Soup
Serves 6
3 tbsp. olive oil
6 cups diced leeks
1/2 cup dry sherry
1 lb. mushrooms sliced
1 1/2 cups sliced celery
2 cloves garlic, finely chopped
6 cups mushroom broth
2 cups water
1 cup wild rice
1/4 tsp ground pepper
1/2 tsp salt
6 tbsp sliced almonds, toasted
Heat oil in a large pot over medium high heat. Add leeks and cook, stirring occassionally until starting to brown. Reduce heat to medium and continue to cook, stirring often until very tender.
Add sherry and cook, stirring often for 1 minute . Stir in mushrooms and celery to cook, sirring often until the mushroom liquid evaporates. Add garlic and cook, stirring often. Add broth, water, and rice; cover and bring to a simmer.
Reduce heat to maintain a gentle simmer and cook, stirring occassionally, until rice is tender. about 1 hour. Season to taste. Serve each portion topped with 1 tablespoon each sour cream and almonds.. I’ll be eating this with some crusty bread. I didn’t have any leeks so used sweet onions instead and I had no sherry on hand so I used some apple cider which I did have on hand. I make do with what I have.
I had to cook today as I had Mother’s Day leftovers on Monday. It’s to be in the lower 50’s so it’s still cool enough to enjoy a bowl of soup and I’ll have some to store away in the freezer.
I hope you have a TERRIFIC Tuesday!

Moderation in everything is good !
I agree with you on moderation. There isn't anything off the table for me, but I eat very healthy 99% of the time. Enjoy that soup today, it sounds delicious!
How funny that we happened to post about the same thing! (I rarely look at the National Day calendar, but saw it was a question on tomorrow's Hodgepodge.) My trigger foods aren't necessarily sweet -- but salty. On the other hand, I could eat soup every week, all year long!
Ingredients for the soup are mostly in my cabinets. I enjoy your recipes.
