Today is National Vanilla Pudding Day which honors a creamy pudding we know and love that has been around since the 19th century. Most culinary historians agree that our modern recipe evolved from custards which date back to Ancient Rome.
Jello introduced the first line of instant pudding in the 1950’s. The advertising compaign announcing the new product promoted it as a busy day dessert.
To celebrate today, make some delicious homemade pudding from scratch, or from an instant mix for and extra special treat, pair it with fresh fruit or chocolate. Yum!

Although I have made pudding from scratch, I prefer the instant variety. It tastes just as good to me and is so easy. My favorite way to fix it is in banana pudding which layers pudding, vanilla wafers, whipped cream and bananas.
It is an excellent busy day dessert and only takes a few minutes to prepare. Just put it in the fridge overnight and enjoy. When the babes were home we always had dessert after dinner and a lot of times it was pudding. They favored chocolate and butterscotch over vanilla, but any pudding topped with some whipped cream would do.
It’s my day to cook up some seafood for dinner, but I will definitely be having some pudding for dessert too. On the menu today is:
Friday - Spring Roll Salad
This makes only 1 serving
The weather is almost tropical here and salads are very good right now.
1 tbsp. smooth peanut butter
1 1/2 tsp sesame oil
1 1/2 tsp. rice vinegar
1 tsp maple syrup
1 tsp soy sauce
1 tsp water
1/2 tsp. minced garlic
Pinch of red crushed pepper, optional
3 cups torn lettuce
3 oz. cooked shrimp
1/2 cup cooked brown rice
1/4 cup chopped red cabbage
1/4 cup julienne bell pepper
1/4 cup julienned carrots
1/4 cup julienned cucumber
1/4 cup avacodo
Fresh mint and sesame seeds for garnish
Whisk peanut butter, oil, rice vinegar, maple syrup, soy sauce , water, garlic and crushed red pepper, if using, in a small bowl until smooth.
Combine lettuce shrimp, rice, cabbage, bell pepper, carrot, cucumber and avocado in a bowl. Add dressing to combine. Garnish with mint and sesame seeds if desired.
This will make a cool and delicious meal for me and I’ll be having it along with a slice or two of crusty bread and of course some pudding for dessert!
We are to be in the upper 80’s today which is very unusual for us.Sad to say I had to turn on the air conditioning.

Make it easy on yourself. Pudding makes a delicious dessert!
Because it's warming significantly here, we're both enjoying salads. This sounds like a tasty twist ... minus the shrimp, that is. (I'm allergic)
Funny you should talk about pudding! A little earlier I was thinking about butterscotch pudding! That's something I've not tasted in years; but was the first thing I learned to make on my Grandma's stove-top.
That it my kind of salad Ma. In fact since I thought we would be away this week I don't have a menu plan for today and tomorrow. I think I'll make this for us too! :)
