Today is National Cherry Cobbler Day which honors a baked dessert made with a rich fruit filling and a biscuit dough crust. Back in the 19th century pioneers of the American west had to adapt many recipes because of severe lack of ingredients. This traditional pie evolved into the cobler which was one served as the main dish of the meal.
No one knows how cobblers got their name, but there a several theories. One source suggests that the word cobbler, evolved from cobbeler, which ws a specific type of wooden bowl used in cooking. Other culinary historians believe the name may have been inspired by the desserts resemblance to to a cobblestone.
To celebrate today bake your own delicious cobbler and serve as the main course of your dinner tonight.

I often have dessert before dinner, so I’d have no problem serving a cobbler up as a main dish for my meal, but I do have dinner already planned and on the menu is:
Market Basket Soup
1 tbsp. olive oil
4 ribs chopped celery
2 onions, chopped
2 carrots, chopped
3 garlic cloves, minced
1 tsp. salt
1 tsp ground black pepper
6 cups vegetable stock or water
2 cans great northern beans, rinsed and drained
2 bay leaves
2; tomatoes chopped
2 tbsp. minced fresh parsley
3/4 tsp dried tarragon
3/4 tsp. dried thyme
In a stock pot, heat oil over medium high heat. Stir in celery, onions, and carrots and cook 5 minutes or until onions are softened. Add garlic, salt and pepper; cook and stir 5 more minutes..
Stir in stock, beans and bay leaves. Bring to a boil over medium high heat, Reduce the heat, simmer covered until vegetables are tender, 20 to 25 minutes. Add remaining ingredients; simmer 5 more minutes. Discard bay leaves and serve.
Makes about 11 servings.
I also had turnips in the fridge so I chopped up one of those to put into the soup. It’s fresh tasting and delicious.
I also have the makings for some cherry cobbler so I’ll probably make some of that for dessert too.
Easy Cherry Cobbler
1 can refrigerated biscuits
1 can cherry pie filling
1/2 cup powder sugar
1 Tbsp. milk
Preheat oven to 350 degrees. Spray a 9 by 13 inch baking dish with non stick cooking spray.
Open a can of biscuits and cut each biscuit into fourths. Pour pie filling in a ;bowl . Add cut up biscuit pieces; stir together until well coated. Pour in baking dish and spread out.
Bake for 25-30 minutes
Mix together the milk and powdered sugar and drizzle over the slightly cooled dessert.
It’s the beginning of another busy week for me. I got some sheer curtains to put up at the windows along with the ones I already have. I thought they would brighten it up here.I’ll put a panel in between the brown curtains I’ve been using and hopefully that will let some light in as well as still give me some privacy.
DD says she is also bringing over some plants for my Mother’s Day gift and helping plant them in the flower boxes on the car port. I don’t think we’ll have to be worrying about it frosting on us anytime soon. They’ll last through the summer until fall and frost come again. It will be so nice to have some flowers blooming here at my house once again. I usually get red and white impatients here and they do very well in the shade. That’s what my pictures are of today from last year’s flower boxes.
Hopefully I’ll also get some fresh herbs to grow, I do love having them on hand and use them in my cooking.

I love both recipes! My Dad made the BEST cobblers, truly he did. I miss him so much. Happy Monday, and take care.
Your recipes for today sound great. When I make cobbler it's usually apple, but they are all good! Do nice that DD is bring you some flowers and will help you get them planted. The boxes along your carport look so pretty! Have a great week Ma! :)

I've got all those ingredients except the beans on hand, so may try making that soup in the instant pot this evening. (Tom wouldn't touch it if he knew there were beans - ha!) Waste not, want not!
