Today is National Chocolate Chip Day which honors an essential ingredient in dozens of delicious baked goods — chocolate chip cookies, pancakes, muffins, brownies, bagels, and many more. You can even find chili recipes that call for theses sweet morsels.
In the 1930’s, Ruth Graves Wakefield created the original chocolate chip cookie at her Toll House Inn in Whitman, Massachusetts. Ruth intended to bake chocolate cookies for her guests, but she ran out of baker’s chocolate. She substituted with chopped up semi-sweet chocolate morsels and discovered that the pieces did not melt into the dough as she expected. Her cookies were an instant hit. Today, 25 per cent of all cookies baked in the United States are chocolate chips.
To celebrate today, bake something yummy to enjoy with your family.

Chocolate Chip cookies were always a favorite in our family. But I don’t make many cookies these days since I’d have to eat them all myself. But it’s easy enough to pick up a small bag when ever I want some so maybe that will be my dessert today.
It’s my day to cook for the weekend and on the menu is :
Chicken and Spanish Cauliflower Rice
Makes 4 servings
1 head cauliflower
1 lb. boneless skinless breasts, cut into 1/2 inch cubes
1/2 tsp salt
1/2 tsp pepper
1 tbsp. oil
1 green pepper chopped
1 onion, chopped
1 garlic clove minced
1/2 c. tomato juice
1/4 tsp ground cumin
1/4 c chopped cilantro
1 tbsp lime juice
Core and cut cauliflower into 1 inch pieces, in batches, pulse in a food processor until it resembles rice.
Toss chicken with salt and pepper. In skillet, heat oil to medium high heat;saute chicken until lightly browned. Add green pepper, onion, garlic, cook and stir 3 minutes.
Stir in tomato juice and cumin, bring to a boil. Add cauliflower, cook covered, over medium heat until cauliflower is tender . Stir in cilantro and lime juice.

PRAYER REQUEST
Please join me today in praying for a dear friend of mine and her family. She lost her daughter on Thursday evening to a bad car crash. It’s so hard to loose anyone we love, but especially one of our children. Please pray that the dear Lord will comfort them and give them strength in this very sorrowful time.
