Today is National Devil’s Food Cake Day which celebrates the chocolate light, decadent and moist chocolate cake. It’s the considered the counterpart to the classic angel food cake. Devil’s food cake has a unique light and most texture which sets it apart from the chocolate cakes. The recipe calls for quite a bit of baking soda and boiling water instead of milk. Both these in gradients contribute to the fluffiness of this confection.
Devil’s food cake first appeared in the United States in the early 1900’s It is quite similar to red velvet cake and the names are interchangeable in some parts of the country. To celebrate today make some divine devil’s food cake for dessert tonight.

As I’m trying to cut back on sweets, I don’t think I’ll be making a cake today, but that doesn’t mean I don’t like Devil’s Food. I do like it but a whole cake for one person isn’t good. It would be different if others would be eating it too.
This is my day of the week to go grocery shopping and I’ve made up a menu for next week, that I’ll be doing my shopping for. This way I’ll bu sure to have what’s needed.
Monday - Slow Cooker Vegetable Minestrone Soup
Wednesday - Creamy Lemon Chicken Parmesan
Friday- Spinach and Tuna Noodle Casserole
Weekend -Skillet Pork Chops with Peas, Carrots and Pearl Onions
On the Menu for today is:
French Ohion Dip Chicken and Rice Casserole
Makes 6 servings
1 tbsp butter
2 onions, thinly sliced
1 8oz. package cream cheese, softened
1/4 cup plain Greek yogurt
1/2 tsp. salt
1/2 tsp ground pepper
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tso cayenne papper
3 cups shredded cooked chicken braest
2 cups cooked long grain brown rice
1 1/2 cups coarsely crushed crinkle cut potato chips
Chopped fresh chives for garnish
Preheat oven to 400 degrees. Coat and 8 inch square baking dish with cooking spray . Set aside. Melt butter in a nonstick skillet over medium heat. Add onions, cook, stirring occasionally, until translucent and starting to brown. Reduce heat to medium low, cook, stirring often until onions are very tender. Remove from heat.
Combine cream cheese, yogurt, salt, pepper, onion powder, garlic powder and cayenne in a large bowl. Beat with an electric mixer on medium speed until smooth. Fold in chicken, rice and the cooked onions. Spoon mixture into the prepared baking dish. Sprinkle with crushed potato chips and cover with foil.
Bake until bubbly, about 30 minutes. Remove the foil and continue baking until the topping is crispy and lightly browned. Garnish with chives, if desired.
It’s going to be a wonderful warm day here with temps in the low 80’s and it’s to be in the mid 80’s through the weekend. Just like summer time weather for us.
But it’s too early for us to be this warm and it will cool off some to the 70’s next week. 70’s is still very nice as far as I’m concerned.

Your plan for today and your menu for the week sound good. You can always make cupcakes instead of a whole cake and keep them in the freezer to have once in awhile or when company comes. :)
Aaaah, THIS is the recipe I've been waiting for! Anything 'French Dip' and I'm in!
I never knew the difference between angels and devils food cakes; or that its practically the same as red velvet. Interesting!
