Today is also National Nurses Day. which recognizes the important work that nurses do to provide care and combat global health challenges such as the current crisis we face. Take time to thank all the nurses in your life.
The International Council of Nurses declared the first International Nurses Day in 1965, because it’s the birthday of Florence Nightingale, the founder of modern nursing. Today also marks the end of Nurses Appreciation Week.
To celebrate today, recognize the vital work that nurses do worldwide and thank them for their dedication to their patients

This SIL lives close to home but I probably won’t see him today, However I did just get to see him when I went out to dinner on Mother’s Day. He is my favorite SIL. Matter of fact he is the only one I have and I love him like one of my sons. He fits right into our family. He is always on hand to help out when needed too. I sent out a card in the mail wishing him birthday love and good wishes. Hope he has a wonderful day!
The only nurse in our family is Number 1, my oldest granddaughter. She is a very special person and enjoys being a nurse. So today, I’ll be sure to tell her Thank You for all she does.
It’s mid week again already and time for me to make up a new menu for the week ahead so I can make up my shopping list for when I go out get groceries today.
On the menu for next week is:
Monday - Market Basket Soup
Wednesday - French Ohion Dip Chicken and Rice Casserole
Friday - Spring Roll Salad
Weekend - Glazed Pork on Sweet Potato Beds
On the menu for today is:
Grilled Pork Tacos
Makes 4 servings
1 lb. boneless pork chops cut into 3/4 inch cubes
2 tbsp lime juice, divided
1 tsp paprika
1/2 tsp salt
1/4 tsp. pepper
3/4 cup black beans, rinsed and drained
1/2 cup canned pineapple tidbits, plus 1 tbsp reserved juice
2 tbsp. chopped cilantro
4 whole wheat tortillas, warmed
sour cream or plan yogurt, optional
In large bowl, toss pork with lime juice and seasonings, let stand for 5 minutes. Meanwhile in a small bowl, mix beans, pineapple with lime juice, onion, and cilantro.
Thread pork onto four skewers. Moisten a paper towel with cooking oil and using long handle tongs, rub grill rack to coat lightly. Grill kabobs, covered over medium heat 6 to 8 minutes or until tender, turning occassionally.
Remove pork from skewers, serve in tortillas. Top with bean mixture and if desired, sour cream.
I think I’ll also put a little grated cheddar cheese on top of mine. This can also be served next to brown rice and a salad of avocado and tomatoes.
