Decide to be happy today, to live with what is yours – your family, your business, your job, your luck. If you can’t have what you like, maybe you can like what you have.
Just for today, be kind, cheerful, agreeable, responsive, caring, and understanding. Be your best, dress your best, talk softly, and look for the bright side of things. Praise people for what they do and do not criticize them for what they cannot do. If someone does something stupid, forgive and forget. After all, it’s just for one day.
Who knows, it might turn out to be a nice day.

I'm looking out the window and the day is drab and dreary, And I'm trying to console myself by thinking something cheery I know it's simply horrible to get in such a slump And I also know it's up to me to get across the hump And I realize I'm selfish to mention this to you For, gee, you might be feeling a little 'low-down' too but often when I feel like this I tell myself it's true That I am not the only one who feels 'low-down and blue' And just knowing there are others who feel the way I do Renews my sinking spirit and keeps me smiling through and know that it's natural to take a 'spirit-dive' Provides the spunk and courage to hang on and survive And while there are a lot of moods that we can drive away by looking on the BRIGHT SIDE in all we do and say, There also is a loneliness that God meant us to feel But, gee, it sure is mighty hard to know which one is real And I'd hate to be a 'sad sack' who never saw the sun And just complained that every day was such a dreary one. But I know that all the dark days are just part of God's plan We should accept them graciously and do the best we can... So I'll just keep on trying for I know it's 'Gospel true' there never was a cloud so dark the sun could not shine through!

Today is Mint Julep Day which celebrates a delicious and refreshing summer cocktail made with bourbon whisky, mint, water and sugar. A secret trick that many bartenders used is to lightly bruise the mint before adding the other ingredients. This releases the herbs distinctive aroma and flavor. A traditional mint julep is then served in a silver or pewter cup with shaved ice.
According to many sources, Kentucky senator Henry Clay introduced the mint julep in the 1800’s. As early as 1815, the county fair champions in the south received silver julip cups as awards. Today the mint julep continues to be associated with the southern region of the United States,most notably as the official drink of the Kentucky Derby. Over the course of the event, bartenders at Churchill Downs serves almost 120,000 mint juleps.
Unlike last year when the Derby was cancelled, this year it had a reduced attendance with reserved seating limited to about 60% of capacity. About 15,000 general admission tickets to the infield were also sold, roughly 25 to 30 per cent of capacity. So the tradition continues on.

I must say that adding mint to your beverage is very refreshing. I’ve had it my iced tea and lemonade too. I don’t think I ever had a mint julep and never attended a Kentucky Derby but it does sound like a lot of fun. I particularly enjoy seeing all the fancy hats the ladies wear. The horses are quite magnificent too.

Today will be a relaxing one for me. After attending Sunday morning church services I’ll be back home again to rest and relax. It’s finally stopped raining, we do have a chance of showers, but not much. It is warming up into the 60’s and by tomorrow we’ll be in the 70’s with a chance of some sunshine too. Thankfully one day of this holiday weekend will be nice enough to enjoy. DD has invited me over for a cookout so I’ll also get a chance to share some of this macaroni salad I have on hand too.

I wish I could make mint sauce like my mother in law did in England. She served it over lamb with mashed potatoes. The mint she got off her own tree, it was wonderful!

I love fresh mint! Yes, the aura surrounding Derby hats and mint juleps is certainly appealing. But that said, I can't get past the taste of Southern Comfort. Had to try it, did, indeed ... but never again. (LOL)
