Today is National Lemon Chiffon Cake Day which was invented by an insurance salesman named Harry Baker in the 1920’s. He sold his cakes to the Brown Derby Restaurant in Los Angeles and all of Hollywood fell in love with the dessert lighter than air texture. Baker carefully guarded the recipe for over 20 years before selling it to General Millis, home of the Betty Crocker brand, for an undisclosed amount.
The recipe for chiffon cake debuted in a 1948 edition of Better Homes and Gardens. General Mills marketed it as the first new cake in 100 years and it quickly became a nationwide sensation. The secret recipe called for vegetable oil instead of butter or shortening, and instructed the baker to beat the egg whites and yolks separately.
There are many flavors of chiffon cake including chocolate, orange, walnut, maple and of course lemon. To celebrate today try baking a delicious lemon chiffon cake for dessert tonight.

Cakes are special. Every birthday, every celebration ends with something sweet, a cake, and people remembwerw, it’s all about the memories.

I won’t be baking any cake today but lemon is a favored flavor for Spring. These days i usually only bake cakes for birthdays and special occasions when I have someone around to help me eat them.
On the menu today is:
:Slow Cooker Chicken and Wild Rice Soup with Asparagus and Peas
Makes 8 servings
2 tbsp. olive oil, divided
1 1.4 kbs skinless chicken thighs
7 cloves garlic, divided
6 cups chicken broth
1 Leek, green parts only sliced
1 carrot halved lengthwise and sliced 1/4 inch thick
1/2 cup wild rice
1 1/4 tsp salt
3/4 tsp pepper
8 o asparagus, trimmed and cut into 1 inch pieces
1 1/2 cups fresh or frozen peas, thawed
1 tbsp fresh chopped parsley
1 tbsp. chopped chives
1 tbsp. lemon juice
8 slices whole wheat baguette, toasted
Heat 1 tbsp. oil in large nonstick skillet over medium high heat. Add chicken and cook, turning once until deep golden brown. Transfer to slow cooker. Finely chop 6 garlic cloves and add to slow cooker along with broth.leeks, carrot, wild rice and pepper.
Cover and cook until chicken is cooked through and the rice is tender, on high for 3 hours or low for 6 hours. Transfer chicken to cutting board and shred into bite size pieces.
Add asparagus and peas to slow cooker ands cook on high uncovered until vegetables are bright green and tender. Stir in shredded chicken, parsley chives and lemon juice.
Halve remaining garlic cloves and rub sides over toast. Driaale toast with remaining 1 tbsp. oil. Serve with soup.
Even though we are supposed to have 70 degree temps tomorrow, they say there will be a chance of snow coming overnight Wednesday and into Thursday. It looks like March will be going out like a lion and it’s still soup weather here.
I don’t have any lemon chiffon cake pictures to share today but I do have plenty ofones with birthday cake and that’s what my pictures are of today.
