Today is Administrative Professional’s Day which honors secretaries, receptionists and administrate assistants. These are dedicated individuals who take notes, answer phones and remember all the little details and keep everyone in the office organized.
In 1952 the International Association of Administrative Professionals organized the first celebration of this day. It’s celebrated worldwide .
There are over 4.1 million that have the job title and another 8.9 million Americans that work in administrative support roles.
To celebrate today make sure to tell your Administrative Professionals just how much they are appreciated.

I will be celebrating today as I used to be a Office manager who served as secretary, receptionist and a bookkeeper too. It was a one girl office and any office work was done by me. I answered phones, paid the bills and did the payroll too.
My bosses were very good to me and always gave me gifts or lunch out on this day. They appreciated what I did and I in turn appreciated having this job to do. It allowed me to raise my family and pay the bills at home too.
It also allowed me to retire and I don’t regret that for a minute. I appreciate being at home and having more time for family. I’m always on hand when needed and especially to do some babysitting.
This is the day I make up my menu for next week to make my shopping list from. I’ll be going out grocery shopping today too.
On the menu for next week is:
Monday- Sheet Pan Sausage and Peppers
Wednesday - Gluten Free Teriyaki Chicken with Broccoli
Friday - Cucumber Sandwich
Weekend - Buffalo Chicken and Cauliflower Casserole
On the menu for today is:
Shepherd’s Pie Twice Baked Potatoes
Makes 6 servings
6 russet potatoes
2 Tbsp. Olive oil
1 lb. lean ground beef
1 onion, chopped
1 green pepper chopped
1 red pepper, chopped
4 garlic cloves, minced
1 Pkg. 16 oz., frozen mixed vegetables
3 Tbsp Worcestershire sauce
1 Tbsp. tomato paste
1 Tbsp. steak seasoning
1/4 tsp salt
1/8 tsp pepper
dash cayenne pepper
2 tsp. paprika, divided
1/2 cup butter, cubed
3/4 cup heavy whipping cream
1/4 cup sour cream
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
1 Tbsp minced chives
1 tsp paprika
Scrub and pierce potatoes, rub with oil. Bake at 375 degrees until tender.
In large skillet, cook beef, onion, peppers and garlic until beef is no longer pink; drain. Add mixed vegetables Worcestershire sauce, tomato paste, steak seasoning, salt, pepper. cayenne and 1 tsp paprika Cook and stir until vegetables are tender.
When potatoes are cooked enough, cut a thin slice off the top of each and discard. Scoop out the pulp, leaving thin shells.
In a large bowl, mash the pulp with butter. Add the whipping cream, sour cream, cheese and chives. Mash potatoes until combined . Spoon 1 cup meat mixture into potato shell; top with 1/2 cup potato mixture . Sprinkle with remaining paprika.
Place on baking sheet. Bake at 375 degrees for 20 minutes. Sprinkle with cheese; bake until cheese melts. Sprinkle with chives and paprika.
You can freeze leftovers in a freezer container. To use, partially thaw and Bake as directed. Adding additional time until heated through…
These will make a complete dinner for me but some may want to use them as a side dish.
It’s a cold one today but so far no snow. Hopefully we won’t see any. I’m going to have to bundle up going out today, but the roads are all clear so it shouldn’t be too bad out.

Where would we be without our Administrative Professionals?
I have known several secretaries who knew more about what was happening in a company than the CEO it seems. And yes they are many unsung heroes sitting behind a typewriter, I mean keyboard. LOL ;-)
From one former Administrative Professional to another, Happy-Happy! (I still say 'Secretary'). I, too, have fond memories of bosses' who thought enough of my work to show their appreciation. One, in particular, stands out for his creativity: We'd been talking about this, that and the other and he happened to ask, what was my favorite restaurant. I didn't think anything about it until one Secretary's Day he said he'd made dinner reservations for me and my husband there; we were to order anything we wanted and it was all taken care of ahead of time. I'll never forget that.
