Today is National Dandelion Day which commemorates the dandelion plant that is more than just a weed. In fact dandelion is an herb with many health benefits. The leaves can be used in salads, soups and teas, and they aide in blood sugar regulation, wound healing, gastrointestinal problems, and even vision. They’ve been known for healthful properties since 659 BC, Dandelion has been a staple food for many global cultures.
Instead of spraying weed killers on them, pull them out and eat them.They can be used for tea, salad, soup and even wine.
To celebrate today, think of dandelions as something more than a weed!

To my knowledge, I’ve never eaten a dandelion, but some of the spring mix salad blends have leaves in them that resemble dandelion leaves.
The pictures today are of DS#6’s daughter, our little Precious One. They are some of my favorite pictures of her and I have used them before.
I haven’t seen any dandelions here yet, but they are often one of the first blooms we see in the spring. I always look forward to seeing them. They are very colorful and remind me of the sun.
We’re to see Sunshine here this morning and then more rain here today, but you know April showers bring May flowers !

Don't think I have ever eaten a dandelion either but a very interesting post and the pictures are just precious.
That is a beautiful granddaughter! I have heard about the dandelion for years, just never thought about it enough to try it.

What a baby doll, your Precious One! She sure resembles her daddy!
There exists a faded recipe for dandelion wine in my grandmother's handwriting, but I've never tasted any -- or had a urge. (lol) I did, however, fall for a quick weight-loss tip a few years ago: 2-3 bags of dandelion tea steeped in a gallon of water. That didn't last long!
