Today is National Corden Bleu Day which means blue ribbon. In the 1500’s the Order of the Knights of the Holy Spirit became known as, Les Cordon Bleus. The knights used a blue ribbon to hang their talisman, and eventually they became associated with distinction and honor. Today, we still award blue ribbons for excellence!
In the culinary world, cordon bleu us a saviory roulade dish made with chicken or veal, ham and Swiss Cheese. Contrary to popular belief, chicken cordon Bleu did not originate at Les Cordon Bleu Culinary Arts school. As with dishes, it evolved over time and first appeared in America during the 1960’s.

There is no Chicken Cordon Bleu on my menu today, sorry but on my menu for today is;
Zingy Baked Chicken Nuggets
Markes 6 servings
1/4 cup plain yogurt
1 Tbsp.tomato juice
1 1/2 tsp seasoned salt
1 tsp. garlic powder
1 tsp ground coriander
1/2 to 3/4 tsp cayenne pepper
1 1/2 lbs boneless skinless chicken breasts, cut into 1 1/2 inch pieces.
2 cups whole wheat bread crumbs
Honey Mustard, optional
Preheat oven to 400 degrees. Mix first 6 ingredients; stir in chicken to coat. Place bread crumbs in a shallow bowl; add chicken, 1 piece at a time, and toss to coat.Place one inch apart on a greased baking sheet.
Bake until lightly browned and chicken is no longer pink, about 20 minutes. If desired serve with honey mustard.
I always go easy when it comes to using cayenne pepper. A little bit goes a long way and I like my food mild. I’ll be having my nuggets with some air fried sweet potato fries. Nothing will be cooked in oil making this a healthy dinner.
Thankfully, I can buy individual servings of chicken cordon bleu in the freezer section at the store and I could possibly have one of those for lunch today. Chicken is very versatile and a healthy meat to eat.
I have a few errands to run today so I’ll have to go out. But it’s a rainy cloudy day today so I’ll be doing what I can to make my own sunshine !! We probably won’t see any here until Sunday !

We always get some education here. In fear of misspelling, that info about the Bleu chic is news to me. I thought it much older than the 60s

I never thought about the translation - blue ribbon. Neat! I've only tasted it once, but would be reluctant to try and recreate at home ... your nuggets sound far less labor intensive!
Hey! I did a post about the Blue Riband chocolate bar in England one time! (And I think riband is an old type spelling of ribbon!) That was my favorite sweet of my English mother in law's and I remember calling them The Blue Riband (Ribbon) couple! They have both passed away now but I hope they knew how much I loved them. xx
