Today is Earth Day which is the largest civic observance in the world, and it’s purpose is to raise awareness about important environmental issues.
More than 1 billion people in 175 countries participate in Earth Day events.
The first Earth Day took place in 1970. After witnessing the effects of an oil spill in Santa Barbara, California , U.S.
Senator Gaylord Nelson organized a grassroots environmental teaching on college campuses across the country. Many people believe that this first Earth Day celebration marked the beginning of the modern environmental movement
To celebrate today, plants trees, help clean up a beach or park, or learn about how you can help locally.

We are the ones that have the responsibility of keeping our Earth green and growing. It’s up to each one of us to do our part. Every locality seems to have some kind of event going on at this time to help clean up our environment. I will definitely be celebrating today by enjoying all the beauty around me from my comfy seat out on the porch. It’s such a beautiful world and we need to keep it that way.
It’a day for me to cook up something new here and on the menu for today is:
Sheet Pan Shrimp Fajitas
Makes 4 servings
3 Tbsp. oil
1 Tbsp. chili powder
2 tsp ground cumin
1 1/4 tsp garlic powder
1tsp lime zest
3/4 tsp salt
1/2 tsp chipotle chile powder
1 large red pepper sliced
1 yellow pepper sliced
1 onion halved and sliced
1 lb, 24 to 30, shrimp, peeled and deveined, halved lengthwise
1 Tbsp. line juice
8 corn tortillas, warmed
Lime wedges, chopped fresh cilantro, or sour cream for serving
Preheat oven to 400 degrees. Combine chili power, cumin, garlic powder, lime zest, salt, and chipotle powder in a large bowl. Transfer 4 tsp. of the mixture to a small bowl and set aside. Add red and yellow bell pepper slices and onion to the large bowl; stir to combine. Spread vegetables on a large rimmed baking sheet and roast on the middle oven rack, stirring once, until mostly soft.
Meanwhile, add shrimp and reserved chili mixture to the large bowl and toss to combine. Once vegetables have softened, remove from the oven and stir in shrimp. Continue roasting until the vegetables and shrimp are heated through. Transfer to a serving dish and stir in lime juice. Serve with warm tortillas and lime wedges, cilantro sour cream or avocado if desired.
serving size is 2 fajitas
I only have flour tortillas so that is what I will be using today. They should still be very good. I’ll also be cutting the tails of my shrimp to prevent crunching on them when I eat my fajita.
We are blessed with another warm day here. The sun is shinning this morning but there is a chance of rain this afternoon.
I also have a bowl of macaroni salad to mix up to take to share at our family Easter gathering tomorrow. It’s a combined Easter and graduation celebration at DDIL#1’s house and DS#5 is giving me a ride as it is a couple of hours away.

On Earth Day, we celebrate all the gifts the world and nature make available to us. We recognize our complete dependance on its bounty. And we acknowledge the need for good stewardship to preserve its fruits for future generations.

YES we are the ones responsible for cleaning up this earth. We can do a lot, no question. I must admit the Nat'l forests and roads are cleaner than they were many years ago. But yep, still work to do.
