Today is Lima Bean Respect Day which honors the humble lima bean. Lima beans are incredibly good for you. They are filled with nutritious fiber, potassium, iron, copper and manganese. They are also low in fat and contain protease inhibitors that stall the development of cancerous cells. Lima beans may not be your favorite healthy vegetable but today is the day to show them respect.
Humans have been cultivating lima beans since 6000 BC. Today people use them in soups, spreads, casseroles and salads. In Japan green baby lima beans are and ingredient in bean paste which is a popular dessert. Succotash, a dish usually found in the southern region of the United States combines lima beans, corn and chili peppers
To celebrate today enjoy some tasty lima beans cooked your favorite way.

For long lima beans have been ignored and not treated right but they make a nutritious addition to every meal.

Lima beans are something I like but don’t have very often, but I do have some in the cupboard so I’ll be celebrating today. I like them mixed with corn. I don’t put any chili peppers in mine but do call it succotash. It will be a side dish with my dinner tonight. On the menu for today is:
Creamy Chicken, Mushroom and Ricotta Pasta
Makes 4 servings
8 oz. whole wheat penne pasta
2 Tbsp. olive oil, divided
1 lb boneless, skinless chicken breasts, trimmed and thinly sliced.
1/2 tsp salt, divided
1/2 tsp. ground pepper, divided
8 oz. mixed mushrooms, sliced
3 cloves garlic, minced
2 Tbsp. chopped fresh thyme or sage, plus more for garnish
1/4 cup white wine or apple juice
2 Tbsp. lemon juice
1 cup ricotta cheese
3/4 cup grated Parmesan cheese plus more for garnish
4 cups baby spinach, coarsely chopped
Bring large pot of water to boil. Cook pasta according to package directions. Reserve 1 cup of the cooking water, then drain
Meanwhile heat 1 Tbsp. oil in a large skillet over medium high heat. Add chicken and sprinkle with 1/4 tsp. salt and pepper. Cook, stirring occassionally, until cooked through… Transfer the chicken to a plate .
Add the remaining oil to the pan. Add mushrooms and cook stirring once until browned. Add garlic, herbs and remaining salt and pepper, stirring until fragrant . Add wine or juice and lemon juice and cook scraping bits for 1 minute. Reduce heat to medium low.
Mix ricotta and Parmesan in a small bowl and add to the pan along with 1/2 cup of reserved cooking water. Stir until creamy. Add the pasta and toss to coat., adding more water to thin if needed. Stir in the spinach and the chicken. Garnish with more Paremesan and herbs, if desired.
Serving size is 1 1/2 cups.

Wednesday -Shepherd’s Pie Twice Baked Potatoes
Friday - Fast Baked Fish
Weekend -Caprese Chicken with Bacon
Yay! It’s finally warming up today. Where there was once snow, now we have puddles. It’s to be in the 50’s today but will be in the 70's by the weekend.

Healthy lima beans deserve some respect.
What a sweet post, the duck in the puddle and the beautiful sunroom.
Also it is our day for Groceries. I love lima beans, mama used to put the 'speckled limas' on the table. Never had nor heard of lima bean's paste. We do learn something here every day it seems.

I had no idea! ... In fact, Tom and I have also been known to scrape ours uneaten into the trash. I was sure surprised when I first tasted them in Camp Stew (aka, Brunswick) and realized they'd absorbed the sauce and flavors of all the other ingredients!
Mom raised lima beans, altho few of our 7 people really liked them. Succotash is a favorite.
