Today is also Good Friday which is a religious holiday also known as Holy Friday and Great Friday.It commemorates the crucifixion of Jesus which probably took place on a Friday. The holiday is celebrated during Holy Week on Friday before Easter Sunday. It is sometimes called Easter Friday too.
Good Friday is a fast day and we should only have one full meal and two light meals this day, in which meat should be substituted with fish. Good Friday is a legal holiday in most Western States and municpalities. However individual states may observe the holiday. Schools generally do not close, bur the day may fall during spring break. The majority of businesses are open today, but the stock market is closed. The post office operates and banks regulated by the federal government do not close for Good Friday. In countries like the US, where the day is not a federal holiday, the afternoon church services are often put off until a few hours after 3 p.m.
To celebrate today try to fast and go to church services.

What is good about Good Friday: Why isn’t it called Bad Friday? Because out of appalling bad came what was inexpressibly good. And the good trumps the bad, because though the bad was temporary, the good is eternal.

This son’s birthday used to fall on what was Tax Day, but now that is changed and Tax Day is the 18th this year. It is another long distance celebration for me as he moved out of state years ago now. He joined the Navy after gradnation from high school and has seen a lot of the world. He is the reason I started doing the proyer for the troops. Thankfully the good Lord brought him home safely and he is now retired military.
I’ll be sending out a card to wish him a very happy birthday and to send my love. Thankfully I talked to him not long ago and he gave me an update on what is going on in his life. All is good.
I’m one that thinks that every Friday is a GOOD Friday. They’ve always been a happy day for me. They are the end of the work week! Yay!
This Friday I will be cooking a meatless meal and on the menu is:
Sheet Pan Shrimp Fajitas
Makes 4 servings
1 1lb uncooked shrimp peeled and deveined
4 Tbsp minced fresh cilantro, divided
2 Tbsp pause 2 tsp. olive oil, divided
3 tsp Caribbean jerk seasoning
1/8 tsp chili powder
1/8 tsp ground cumin
1 cup sour cream
1 large onion, halved and thinly sliced
1 sweet red pepper, cut into thin strips
1 green pepper cut into thin strips
8 flour tortillas, warmed
1/2 cup salsa
In a bowl, toss shrimp with 2 tablespoons cilantro , 1 tablespoon oil and spices; let stand 10 minutes. Meanwhile in a small bowl mix sour cream and remaining cilantro.
In a large nonstick skillet coated with cooking spray, heat 1 tsp oil over medium high heat. Add onion and peppers; cook stirring until crisp tender. Remove from pan.
In same pan, heat remaining oil over medium high heat. Cook and stir shrimp until it turns pink. Return onion mixture to pan; heat through. Serve with tortillas, salsa and sour cream mixture.
I think I’ll also slice off the tails of the shrimp before cooking them. I don’t want to be crunching on them when eating the frajitas. Otherwise I’ll cook as directed.
This is my day to go back to my eye specialist so he can check and see how we’re doing. I expect a good report as I;ve had no problems. DD is once again my driver incase my eyes have to be dialated.
