Today is National Pet Day which is all about appreciating and celebrating the wonderful pets in your life. There are approximately 86.4 million pet cats and 78.2 million pet dogs living in the United States. Gerbils, birds, turtles and fish are also very common household pets. Many pet owners consider their pet an important member of the family.
Celebrity and pet lifestyle expert and animal welfare advocate, Colleen Page founded National Pet day to raise awarenance the importance of pet adoption. The motto of the holiday is, Adopt! Don’t shop! and it is sponsored by the Animal Miracle Foundation, whose mission is to help animals in shelters to find forever homes.
To celebrate, take your dog on a walk or give some catnip to your cat to show your love and appreciation..If you’re not a pet owner, consider making a donation or volunteer at a Pet Shelter.

The pets in my family are my grand dogs. They belong to my children and all of them are considered family . Over the years we’ve had many pets, but as I’ve gotten older I find I can no longer care for them the way they should be cared for.
Still I have the grand dogs and various other pets to enjoy. All of my children have at least one.
Sadly we lost the sweet girl shown above this past winter. She is very missed and very loved.
This will be a busy day and week for me. Today I have to call to see when my apparentment for cataract surgery will be for tomorrow. I also have to take the car in for repairs. Meanwhile DD will be giving me a ride here and there. I’m hoping that the surgery is not scheduled too early. But it will be in the morning one way or the other. So if you don’t see my post early in the morning you’ll know why. I’ll be making it later in the day. We’ll see how it goes…
This is supposed to be my day to cook something new, but I don’t know yet how successful that will be. But on the menu for today is;
Hearty Minestone
Makes 4 servings
2 tsp. olive oil
3 leeks, trimmed and washed and thinly sliced
4 cups chicken or vegetable broth
1 cup water
1 large potato, diced
2 tsp. dried thyme
1/4 tsp. salt
1/2 tsp ground pepper
1/2 cup whole wheat orzo or small pasta
1 15 oz. can white beans, rinsed
2 zucchini, quartered and thinly sliced
1 lb. frsh spinach, stems removed
2 Tbsp. cider vinegar
2 Tbsp. freshly grated Parmesan cheese
Heat oil in a Dutch oven or large soup pot over medium high heat. Add leeks and cook stirring occasionally until soft. Add broth, water, potato, thyme, salt and pepper. Bring to a boil, reduce heat to low and simmer, covered about 5 minutes.
Add orzo or pasta and cook partially covered, stirring occasionally to prevent sticking, for 5 minutes more. Add beans and zucchini and continue cooking,, partially covered until the vegetables and pasta are tender.
Stir in spinach and cook, stirring until wilted.Season the soup with vinegar. Ladle into bowls and garnish with Paremesan.
You can eliminate the vinegar if you’d like, it does make for a distinct flavor that some don’t like. I will use Ditalini pasta in mine.

My grand dogs are definitely a part of our family!
As a boy it wold have been harder without a dog to share the fun of running and playing and to tell my troubles to! Traveling doesn't lend itself to pets (for us anyway) but growing up the boys had a dog...

Although I wasn't crazy about adopting our 'lady girls' back in 2013, I can't imagine what life would be like without them. Pets' love is so generous and unconditional, how can we help but strive to be a better person?
Lifting prayers for your surgery tomorrow. Not sure why it is, but both Alabama and Florida won't tell patients what time until the afternoon before.
