Today is National Peanut Butter and Jelly Day which has become a staple in school lunchboxes for over fifty years.
According to one story, American soldiers invented this sandwich during WWII. They decided to combine their bread, jelly, and peanut butter into a fabulous new treat. When the soldiers returned home after the war, peanut butter and jelly sales soared.
To celebrate today, make this iconic American sandwich for lunch today.

You can spread jelly on the peanut butter but you can’t spread peanut butter on the jelly.

I always have peanut butter and jelly on hand and will definitely celebrate today. When my youngest son was in Kindergarten, I’d buy his lunch in the cafeteria, but the lunch lady told me I was wasting my money. He wouldn’t eat their food. When I asked him why, he said he didn’t have time to eat all of that and only wanted a Peanut Butter and Jelly Sandwich for lunch and so that is what he ate for lunch for the rest of the year. I’d rather he ate something than to throw food away that he wouldn’t eat at all.
No matter that I’m older now, I still like this sandwich and don’t think I’d ever tire of Peanut Butter and Jelly. They always hit the spot.
This is my day to cook for the weekend and on the menu today is:
Hungarian Goulash
Makes 12 servings
3 onions, chopped
2 carrots chopped
2 green peppers, chopped
1 lb. beef stew meat
3/4 tsp. salt, divided
3/4 tsp. pepper, divided
2 Tbsp olive oil
1 1/2 cus beef broth
1/4 cup flour
3 Tbsp. paprika
2 Tbsp tomato paste
1 tsp. caraway seeds, optional
1 garlic clove, minced
dash of sugar
12 cups uncooked whole wheat egg noodles
1 cup sour cream
Place the onions, carrots, and green peppers in a slow cooker. Sprinkle meat with 1/2 tsp. salt and 1/2 tsp. pepper. In large skillet brown meat in oil in batches and transfer to the slow cooker.
Add broth to skillet, stirring to loosen browned bits from pan. Combine the flour, paprika, tomato paste, caraway seeds, garlic, sugar and remaining salt and pepper; stir into skillet . Bring to a boil and cook and stir until thickened. Pour over meat. Cover and cook on low for 8 hours or until meat is tender
Cook noodles according to package instructions. Stir sour cream into slow cooker . Drain noodles and serve with goulash
Serving size is 2/3 cup goulash and 1 cup noodles. I don’t have caraway seeds so will omit them from this recipe. This may not be my regular goulash recipe but it sounds delicious. I’ll be making only 1/2 this recipe as it makes so much.
We’re hoping for partly cloudy skies by afternoon and it’s to be almost 50 degrees too, Looking ahead into next week it seems to be in the 50’s and April showers are coming our way. So I’ll be trying to enjoy whatever sunshine we get today! At least it won’t be so cold.
A date was set yesterday for my cataract surgery. The left eye will be done on April 12th and the right eye a few weeks later on. I’m thrilled to be having this done!

Darn, I indulged in the last smidgen of JIF yesterday -- then, because I've little-to-no self control around an open jar, decided I'd best abstain for a while.
Too cute about your son's lunch lady ratting him out. I always enjoy reading glimpses from your children's childhoods! Does he still enjoy PB&J's?
