Today is April Fools’ Day which is a day to beware of practical jokes, pranks, and tricks! Although it’s been celebrated for hundreds of years, no one really knows how the tradition began.
According to one theory, when France officially adopted the Roman calendar in the 1500’s many rural communities continued to celebrate New Years Day in April. The people in these small villages became known as April Fools .
There are many famous and infamous April Fool’s Day Jokes. In 1957, the BBC ran a very successful fake documentary that explained to viewers how spaghetti is grown on spaghetti trees. Many people actually believed it. In 1996, the Taco Bell Corporation took out full page ads in six major newspapers announcing that it had purchased the Liberty Bell . Hundreds of enraged citizens called to protest newly named Taco Liberty Bell. The company waited a few hours before admitting that it was a practical joke.
To celebrate today, play a trick on a family member and watch out for pranks played on you.

Today I have an appointment with a new doctor for a consultation on having my cataracts operated on. I do hope it is no joke and that soon, I’ll be able to get it done.
DD is taking me as it’s not close by and I may have tests that will hamper my vision. Besides I want her there to hear what will happen and when. It always pays to have another set of eyes and ears on the situation. She’ll also be my ride when I have the surgery done.
I’m so thankful for her assistance. She is always there when I need help.
I have no plans to prank anyone and hope I’m not tricked, but will be on the watch out for any practical jokers out there. Our worst joke here is often the weather on April 1st. Very often we get snow. However, that is not to be today. It’s much colder with a high of 40 and its windy making it seem even colder, but there is not much snow in the forecast for today. But that is what is in my pictures for today.
It’s supposed to by ny day to cook something new and on the menu is:
Creamy Mushroom, Spinach Pasta
Makes 4 servings
10 oz. whole wheat spaghetti
3 Tbsp. olive oil
2 8oz, pkgs sliced fresh mushrooms
3cloves garlic, minced
1/2 cup half and half
2 Tbsp white miso
4 cups packed fresh baby spinach
1/4 cup grated Parmesan cheese
2 Tbsp. lemon juice
Bring pot of water to boil. Cook pasta according to package directions. Drain, reserving 1 cup of cooking water. Set aside.
Heat oil in a large skillet over medium high heat. Add mushrooms and garlic. Cook, stirring occasionally until mushrooms are tender and beginning to brown. Whisk together half and half, miso and 3/4 cup of the reserved cooking water in a small bowl.
Reduce heat to medium, add half and half mixture to the mushroom mixture. Cook stirring constantly until the miso breaks down. Add spinach and Parmesan, cook, stirring constantly until the sauce is slightly thickened. and the spinach wilts. Add pasta, toss to gently coat, adding more reserved cooking water if needed to reach desired consistency. Remove from heat and stir in lemon juice.
I didn’t have miso so subsituted 1/2 Tbsp soy sauce in my recipe.Otherwise I’ll fix the way it appears in the recipe above.

I've not heard a good April Fool's joke in years. The last, when a local radio station shared as part of their newscast (that) the City Council had enacted tolls on the metro's busiest highways: (e.g, $2.02 on the 202, 60-cents on the 60 ...) My husband fell for it, hook-line-and-sinker. I think his irate response was funnier than the gag.
Hope you get some positive news at the eye doctor! It's always a good idea to have another set of eyes and ears.
