ON THE BRIGHT SIDE
WEDNESDAY, JUNE 2ND, 2021
The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a special occasion!

Today is National Rocky Road Day which celebrates a delicious dessert with an interesting culinary history. In 1929 after the stock market crash, a man named William Dreyer, the founder of Dreyer Ice Cream, calmed his Black Thursday nerves by creating the original rocky road. He mixed chunky almonds, mini marshmallows and delicious milk chocolate ice cream to create a new ice cream flavor that would make people smile despite the tough economic times. It instantly became an American favorite and soon became popular all over the world.
In Austrailia, people add jam to their rocky road ice cream and in the United Kingdom, they add cherries and raisins.
Celebrate today with a delicious rocky road ice cream sundae, Yum!
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
A day without ice cream was a day wasted
Iain Pears
As the days continue to warm up, ice-cream is becoming more and more popular and this is one of my favorites.
I’ll be having an ice cream cone today called a drumstick. It is dipped in chocolate with nuts sprinkled on top. I keep them and orange dream cycles in the freezer all sumer long
I also keep vanilla ice cream on hand too and instead of chocolate ice cream , I simply add chocolate sauce to my sundaes.
Meanwhile it’s my day to shop and as usual I’ve made up a menu to do my shopping from so I’ll have everything I need for next weeks meals.
Monday-Flavorful Chicken Fajitas
Wednesday- Confetti Kiebassa Skillet
Friday - Crispy Fish and Chips
Weekend - Turkey Stuffed Bell Peppers
On the menu for today is:
Easy Jambylaya
2 tbsp. oil
1/2 lb. fully cooked smoked turkey sausage, sliced
2 cups cubed fully cooked ham
3/4 lb. boneless skinless chicken breasts, cubed
1 can diced tomatoes, undrained
3 cups chicken broth
2 green peppers chopped
1 onion chopped
1 tbsp. Cajun seasoning
2 tsp. hot pepper sauce
3 cups instant brown rice
1/2 pound shrimp, peeled and deveined
In a Dutch oven heat oil over medium high heat. Add sausage and ham . Cook until browned.
Add chicken to pan, cook until no longer pink. Stir in tomatoes, broth peppers, onion, Cajun seasoning and hot pepper sauce. Bring to a boil. Reduce heat and simmer.uncovered until peppers are crisp tender.
Return to a boil, stir in rice and shrimp. Reduce heat and simmer covered, until shrimp turns pink. Remove from heat, let stand covered until rice is tender.
This makes 10 servings so I think I’ll only make 1/2 this recipe. I also leave out the hot sauce, because I like my food mild
I hope you have a WONDERFUL Wednesday!

Ice Cream is my favorite summertime dessert!
Well now I'm craving a nice ice cream cone, my favorite is coffee. Your menu and tonight's meal sound fantastic, enjoy!
Interesting back-story! Rocky Road used to be my favorite, but now it's a toss-up between butter pecan and pistachio.
