Today is Juneteenth, the annual celebration of the end of slavery in the United States. On this occasion we reflect on the Black Freedom in America, racial justice and equality, and how far we have to go. Juneteenth was first celebrated in Texas in 1865 and has since spread across the United States and the world.
People often wonder why Juneteenth is celebrated the 19th of June instead of September 22nd when the primary Emanciation Proclamation was issued by President Lincoln. The answer is of great historical significance. It was on June 19th that the Union Army marched into Galveston, Texas and enforced emancipation. Since then celebrations in Galveston have been among the largest in the world.
There are many ways to celebrate today. It’s a good day to advocate the racist equality in your community.

I’ve never thought of myself as a racist person and was raised to believe that God loves all of us no matter what color we are. Each one of us is unique and special in God’s eyes. My mom always told me I was no better that anyone else, just as no one else was any better than me. We are are equals in His Eyes.
I’m an admirer of the great dreamer, Martin Luther King Jr. and of President Abraham Lincoln. They both did a lot to make our Country great and to preserve equality for all.
In the news yesterday, President Biden declared today an official holiday and our governor of Ohio also proclaimed it an official state holiday.
Today is my day to cook for the weekend and on the menu today is:
Baked Lemon Pepper Chicken
Makes 4 servings
4 boneless skinless chicken brasts
1/4 cup lemon juice
1 tbsp. olive oil
1 tablespoon lemon pepper
1 tsp dried basil
i tsp dried oregano
1 tsp salt
Preheat oven to 350 degrees. Lightly grease a 9 by 13 baking dish.
Lay chicken breasts out into baking dish Drizzle with lemon juice and rub with olive oil.
In a small bowl, whisk together lemon pepper, basil, oregano and salt. Season chicken with mixture, coating all sides.
Bake for 30 minutes until chicken reaches 165 degrees . Serve hot . Garnish with freshly chopped parsley and lemon slices, optional.
I going to have this with a side of brocolli and rice, a packaged mix I have on hand. It is very easy and delicious.

How far we've come ... but we've still a long ways to go in erasing racism. Let their be peace on earth!
