Today is the Summer Solstice, the first full day of Summer. Summer actually came yesterday at 11:32 p.m. EDT. But today is the first full day of Summer!
The Summer Solstice for the people who live in the Northern Hemisphere of the world, it’s the longest day of year.In the Arctic Circle, there will be 24 hours of daylight. The summer soltice occurs when the Earth’s axial tilt is the closest to the sun. This occurs late June for the Northern Hemisphere and late December for the Southern Hemisphere.
It’s a significant time for many religions and cultures. Traditionally, people all over the world will mark this important milestone in the year with festivals, gatherings, and rituals.
To celebrate today, grab your sunglasses and head outside to enjoy the extra hours of daylight. It’s also the perfect time to plan a summer gathering. Happy Summer!!

I’m loving the longer hours of daylight we are having and will be celebrating today and putting my sun glasses on and heading out doors. I don’t get enough sunshine and need to soak up some of those good warm rays. Although they are saying we have a 60 percent chance of rain and it will be windy. So my outdoor time may be spent on the porch. I’m thankful for this outdoor space that is all enclosed with windows that have screens that open so I can get the fresh air, but I’m still protected from the rain. If the sun comes out I’ll move outdoors. They say tomorrow will be sunnier but cooler, but then after that it’ll warm back up in the upper 70’s and lower 80’s, maybe I’ll even be able to head out to the pool.
Today is Monday and time to cook up something new and on the Menu is:
Easy Pea and Spinach Carbonara
Makes 4 servings
1 1/2 tbsp olive oil
1/2 cup whole wheat breadcrumbs
1 clove garlic, minced
8 Tbsp. grated Parmesan cheese, divided
3 tbsp. finely chopped fresh parsley
3 large egg yolks
1 large egg
1/2 tsp pepper
1/4 tsp. salt
1 package 9oz.whole wheat linguine
8 cups baby spinach
1 cup peas, fresh or frozen
Put 10 cups of water in large pot and bring to boil over high heat.
Meanwhile heat oil in large skillet over medium high heat. Add breadcrumbs and garlic; cook, stirring frequently, until roasted. Transfer to a small bowl and stir in 2 tbsp. Parmesan and parsley. Set aside
Whisk the remaining tablespoons Parmesan, egg yolks, egg, pepper and salt in a medium bowl.
Cook pasta in boiling water/ Add spinach and peas and cook until pasta is tender. Reserve 1/4 cup of the cooking water. Drain and place in a large bowl.
Slowly whisk the reserved cooking water into the egg mixture. Gradually add the mixture to the pasta, tossing with tongs to combine. Serve topped with the reserved breadcrumb mixture.
You can add some crumbled bacon to this if you wish. I think I will.

I love your sunporch, such a perfect spot for sunshine and fresh air while still being protected from the elements. I hope you will be able to get out a bit today and enjoy your delicious dinner!
Your sunporch looks so cheerful (that floor mat!) and comfy. My mother had something similar at her Florida home and loved spending her mornings there with coffee and the newspaper. I hope your rainfall doesn't linger too long!
