It’s National Chocolate Eclair Day which may have gotten it’s name from the flash of frosting that glistens across the top, through the direct connection between lightning and this French Pastry. Eclair is the French word for lightning.
The eclair has been a favorite treat since it’s creation in the 1880’s and it will undoubtably continue to be bakery shop staple for a long time. The French call the dough of these treats, Choux, which is carefully baked to allow a hollow center. Then cream, custard or puree is piped into its center and it is topped off with fondant icing.
With its flaky dough and sweet, creamy filling, this dessert has become a global favorite. Celebrate today and order some sweets from your local bakery.

I happen to have some frozen eclairs to enjoy today so I will definitely be celebrating and having one. The box is full and I can take out only one or two to enjoy and save the rest for another day. The box is resealable and they’ll keep well for a long time to come. They make a good treat for summertime. Nice and light and delicious.
I came across this easy no bake pudding dessert a few years ago so I’m sharing this recipe today
Chocolate Eclair Dessert
Makes 12 servings.
2 individual packages graham crackers
2 3 oz. packages instant vanilla pudding mix
3 cups milk
1 8 oz container frozen whipped topping, thawed
1 package prepared chocolate frosting
Line the bottom of a 9 by 13 inch pan with graham crackers.
In a large bowl, combine pudding mix and milk; stir well. Mix whipped topping mix into pudding mixture. Spread half of mixture over the graham cracker layer. Top with another layer of graham crackers and the remaining pudding.
Top with a final layer of graham crackers and frost with chocolate frosting. Refrigerate at least two hours before serving to allow graham crackers to soften.
This was a favorite summertime treat for my family.
I have no eclair pictures to share today but have plenty of some of my family having summertime fun.

Now my mouth's watering like crazy! Glad to hear you're treating yourself a little at a time. I may do the same with the mini cheesecakes I saw in Target's frozen food aisle. Have yourself a super day!
