ON THE BRIGHT SIDE
WEDNESDAY, JUNE 23RD, 2021
The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is National Pink Day which is a celebration of the color pink and everything it represents, such as femininity, softness, childhood and the romantic. Everyone is encouraged to wear something pink today, both women and men,
The color pink is used to describe a shade of pale red and was named after a flower of the same name.
The word was first used as a verb in the 14th century, when to pink something meant to decorate it with perforated or punched pattern by using pinking shears on fabric.
While the color pink described in books was used to refer to the color in the 17th century after a Dutch flower of the same shade that was named pinker..
While we associate pink with femininity, that wasn’t always the case. During the 20th century, boys were dressed in pink and girls in blue. This was because the men in England wore red uniforms and so small boys would be dressed in the paler hue of red. At the time pink was seen as stronger and more masculine color than blue.
When pink became a more feminine color there was an unspoken word that men shouldn’t wear it. However in recent years this has not been the case and more men incorporate pink in their clothes and accessories .
To celebrate today wear something pink, buy some pink flowers for yourself or someone special, and just enjoy the brightness and tenderness of the color.
Although it’s not the purpose of this holiday, you can also let it be a reminder to show support for a cause commonly associated with pink and donate to a charity like Breast Cancer Research.
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
Just the color pink makes me smile.

Although my favorite color is red, I do like pink which is a paler shade of red .The pictures today show one of my favorite pink flower, cone flowers that I used to have in my flower beds. A few of my granddaughters also love purple which is a mixture of blue and pink.
I even had pinks in my flower beds at the old house. They grew well and added a bit of color.
It’s Wednesday and once again time to make up a new menu for next week. My how the time flies, seems like I just did that.
My menu for next week is :
Monday -Mom’s Spanish Rice
Wednesday- Confettie Kielbasa Skillet
Friday- Summer Shrimp Salad
Weekend- Summer Steak Kabobs
I only cook every other day and eat leftovers in between. On the menu for today is:
Pork Chops with Balsamic Sweet Onions
Makes 4 servings
4 boneless pork loin chops
3/4 tsp.salt
1/2 tsp pepper
1 tbsp. olive oil
2 cups thinly sliced sweet onions
1 tsp. chopped fresh thyme
1/2 cup chicken broth
1/2 cup water
1/4 cup golden raisins
3 tbsp. balsamic vinegar
1 tbsp butter
1 tbsp chopped parsley
Sprinkle pork with salt and pepper. Heat oil in a large skillet over medium high heat . Add the pork and cooking, turning once, until browned. Reduce heat to medium and continue cooking until a thermometer reads 140 degrees. Transfer pork to a plate and tent with foil. Add onions and thyme to the pan. Cook stirring often for 1 minute. Add broth and water cover and cook for 5 minutes. Uncover and cook stirring often until the onions are soft and most of liquid has evaporated, about 5 minutes. Stir in raisins and vinegar, scraping up any browned bits. Bring to a boil. Cook until thickened, about 3 minutes. Remove from heat and stir in butter. Serve the pork with sauce, topped with parsley.
I’ll be having these along with some sweet potatoes and applesauce. I have some apples that have been around too long, so I’ll peal and slice them up and make some homemade applesauce.
I hope you have a WONDERFUL Wednesday!
COUNTING MY GIFTS
I believe in pink. I believe that laughing is the best calorie burrner. I believe in kissing, kissing a lot. I believe in being strong when everything seems to be going wrong. I believe that happy girls are the prettiest girls. I believe that tomorrow is another day and I believe in miracles.

Counting at least 3 things every day that I'm thankful for. There is truly is always something to be thankful for.

I love the color pink!
Your dinner and your menu for the week sound delicious! Think pink today. :)
Love all those pretty pink flowers and you are doing great on your menu's.
That's so interesting about little 20th century boys wearing pink. When my mother was working as a nurse (early 40's) she said they'd dress new babies that way -- blue for girls and pink for boys. The nurses' reasoning being, that would be the only time those tiny humans could do that. Gosh, if they could only see today's fashions ... no rules!
