Today is National Best Friends Day. Best friends may be hard to find but life wouldn’t be the same without them. Today is our opportunity to celebrate that one special person in our lives who has always been there for us.
To celebrate make a plan to spend some quality time with your best friend. Go for a walk or plan a virtual movie watch party together, or catch up over Face time. Whatever you decide to do just be sure to thank them for all the wonderful times you’ve had together.

I have a lot of good friends, some are like family to me and some are family that are like friends. Years ago my daughter told one of her teachers that her best friend was her mom. I’m here to tell you my daughter has become my best friend. It wasn’t always like this, when she was a teenager, we had a hard time getting along. Now though I consider her a good and true friend. She is always there for me and there’s not a day goes by that we don’t talk to each other. We enjoy doing a lot of the same things too.
I think the best way to have a good friend is to be one. If we’re not a good friend, we won’t have any. I like to think I help her out just as much as she helps me.
There is no one I trust as well as I trust her. She’s dependable and always there. Though all the tough days of the pandomenic she saw that I had what I needed. When we were in lock down, she got my groceries for me and brought them right to my door.She’s a wonderful daughter and one I consider my best friend .
Today is my day to cook and on the menu is:
Flavorful Chicken Fajitas
makes 6 servings
4 tbsp oil, divided
2 tbsp. lemon juice
1 1/2 tsp seasoned salt
1 1/2 tsp dried oregano
1.2 tso cumin
1 tsp garlic powder
1/2 tsp chili powder
1/2 tso, paprika
1/2 tsp crushed red pepper flakes, optional
1 1/2 subs boneless skinless chicken breasts, cut into thin strips
1/2 sweet red pepper, julienned
1/2 green pepper, julienned
4 green onions, thinly sliced
1/2 cup chopped onion
6 flour tortillas,warmed
Optional shredded cheddar cheese, taco sauce, salsa guacamole, sliced red onions and sour cream
In a large bowl, combines 2 tbsp. oil , lemon juice and seasonings.Add the chicken. Turn to coat, cover, refrigerate at least 1 hour.
In a large cast iron skillet, sauté peppers and onions in remaining oil. until crisp tender. Remove and keep warm.
Drain chicken, discard marinate. In the same skillet cook over medium high heat until no longer pink. Return pepper mixture to pan , heat through.
Spoon filling down the center of tortillas, fold in half. Serve with desired toppings.
Frajotas are good served with beans and rice, tomato avocado salad or colorful corn and bean salad.

I remember reading what your daughter told her teacher ... Ma, that's about the best compliment I've ever heard!
This fajitas recipe sounds fun. I've only had them once (in a restaurant) and was so embarrassed because of the mess I was making while 'building' them. I vowed never to do that again, but here at home? Why not!
I feel the same about my own daughter.
